Drinks after teaching with my buddy who came in to guest lecture, which left me craving breakfast for dinner! The circumstances led to terrible plating and again only remembering to take a pic after the stuffing my face had already begun. 2 strips of bacon, 2 eggs fried in the remaining grease, extra sharp cheddar on the last nub of sourdough, toasted. Heaven.

Tonight’s dinner was a repeat… Tuna Cakes (again), baked potato and green beans. I did have to cut up Sunshine’s potato for her, but this time – it didn’t seem to bother her.

Ehhh… Hot meal served. :expressionless_face:

Korean Potato Salad (Gamja Saelleodeu) from “Koreatown” - normally more of a banchan but here as a main with some sausages. Russet potatoes are cooked and then mashed but with still larger chunks to have some texture. Mixed with a hint of sugar and cooled down. Mixed with diced carrots, apple, corn, cooked egg white, mayonnaise and yakult. Topped with crumbled egg yolk

I made something like dumpliolis with the leftover dover cod and diced mushrooms and green onions, in wonton wrappers, served with EVOO and Pecorino Romano. It was very good, but I’d like to figure out a less ugly dumpling shape.

ETA: I felt smug about coining “dumplioli”, but Google dashed my smugness.

My PIC was part of an event at the local bookstore yesterday, giving a short introductory talk on the topic at hand (UFOs, of course! :flying_saucer: :flying_saucer: :flying_saucer:), after which a local author read a couple of pages from his newly released book about an alien invasion.

While the bookstore claimed to have ordered copies of my PIC’s book 3 weeks ago, they unfortunately hadn’t arrived in time :face_with_symbols_on_mouth:. A student a cappella group performed 3 space-themed songs, the author did a book-signing afterwards, and I got TF outta there to catch the second set of one of my friends, who was performing at a pub downtown, and to get our order of yet another delightfully slutty double stack cheeborger in before 8pm, after which that bit of culinary magic is no longer available.

The boygah hit all the spots, my friend sounded great (unfortunately a very small crowd), and we grabbed a couple of drinks at the bar upstairs with friends. My first was a wonderful spritz with bublé, blood orange juice, and Campari.

Nice hump day.

I “repurpose” food all the time! Make a roasted chicken; there are tons of ways to use the other half of the chicken after the initial meal is made.

I have a LOT of half-cup containers of various sauces or pestos (to use up a very bloomy parsley plant from last year!) that I can use for a one-off meal if I get home late and can cook up a quick single pasta meal or have defrosted a piece of chicken and just want something easy to top it.

Thank god for my freezer Excel spreadsheet to keep track. LOL

Tonight I made ground beef taco soup with whole wheat cornbread. I used this recipe but subbed ww pastry flour for the AP and reduced the sugar to 1/3 c. I also added a few tablespoons of sourdough discard. It was really good cornbread!

I’m bringing some of the same to my friend with the new baby in the morning.
