Busy day but I managed to get so rancho gordo alubia blancas into the instant pot. Cooked up some onion in a little olive oil, added some baby Bella’s, a whole latta garlic, some kale and s&p along with bean liquor and some butter. Some parm to top, and consumed with cornbread I made this morning to ensure a kid woke up on the right side.
I’m not so good at plating but I have to remember that I still like to see other people’s food when it’s not beautifully presented. Some of you set a high bar!!
You got up and made cornbread to make a kid’s day!! And made beans from scratch! Don’t worry about plating. Anyway, looks great!

An enchilada-like casserole stuffed with onions, poblanos, mushrooms, avocados, and crumbled cheese in a slightly thickened vegetable stock seasoned with cumin, garlic, and New Mexico chili powder. One photo is before the top and a light, seasoned tomato sauce went on.
On my own for dinner tonight, so I took the “stupid easy” route.
Bean, cheese, and chicken quesadilla with homemade refries, Tillamook cheddar, and leftover peri peri chicken. Chopped salad with tomatoes, scallions, avo, and romaine.
Busy cooking day @casa lingua: my boo made coconut ice cream for tomorrow’s Filipino feast we’re hosting (rice was already made yesterday), and I made the pork adobo bc my PIC’s grad student, whose mom is Filipino said it tastes even better the next day. Perfect, bc that means hella less work mañana, when we’re much busier.
I also did not expect just how long it would take me to debone the shoulder and brown the pork. I like to get a deep, dark sear on preferably ALL sides — not just the easy, flat ones — so from start to finish that pork prep took well over two hours. No doubt it’ll be worth it!
As for tonight, we spontaneously invited a pesca friend to join us for our first grilled meal of the year. He brought skinless salmon filets I brushed with avo oil & Cajun seasoning, while we had the much anticipated NY strip steaks we got at Sam’s Saturday
that had been dry-aging in the fridge ever since,
along with baked taters with TPSTOBASS (butter & scallion sour cream), plus a Caesar with CK’s dressing.
Steaks came out rather perfectly,
as did the taters, and our buddy was happy with his salmon.
We have about half of one steak left as we couldn’t possibly finish it all.
Martinis coming up for dessert, and we’ll probz watch a movie while our krazy katz chase each other around the living room & wrassle.

Lo mein noodle stir fry. Onion, garlic, carrots, cauliflower, broccoli, red bell, mushrooms, bok choy with a spicy gochujang miso/tamari sauce and green onions. Pickled veg. Gibson rocks.
Crispy mashed potato and poblano tacos from TJ for taco Tuesday. Not too bad. Another tiny Gibson. Ina looks pleased.
I made fried rice with yesterday’s chicken and rice and egg, a splash of fish sauce and sesame oil. Not much different from last night, I guess.

Here’s a long-ago thread I started that can always use a new post! (I keep forgetting about it as well!)
I spent most of the day taking refuge on the sofa due to freezing rain that started mid morning. I made a quick trip to the grocery store before the rain started because I neglected to go in advance. I usually keep an eye on the forecast so I can go to the store a day or two ahead of time but I dropped the ball this time. The sidewalks and tree branches are now encased in ice. I hope the power doesn’t go out. So for dinner I had a favourite dish - shrimp risotto. I heated a little oil in a pot then sautéed an onion and some celery. I added some arborio rice then chicken stock then let it cook away. I added a little grana padano at the end. I added the shrimp since I used the last of some pre-cooked shrimp in the freezer.
