Oh how I wish I’d purchased gas a week or more ago. I never go anywhere but this dental thing requires travel. My DiL said we need to start following through with the I should’ves instead of just thinking about it.
Blsl chicken thigh, seasoned with s&p, granulated garlic and onion, paprika, oregano, seared and roasted with pan drippings and splash of wine sauce.. Room temp potato and asparagus loosely inspired by @ChristinaM’s loosely inspired NYT recipe. The dressing is a keeper. Sliced roma tomato that needed to be used up, it had more wrinkles than I do.
Couch Potato Salad (so named because I made it sitting on my couch, dicing the vegetables the way Grammy used to do, in the hand), carrot salad (this time better with cranberries and sunflower seeds and best foods mayo), and Foster Farms chicken. All yummy.
I spent the afternoon batch cooking Hot Pockets for Neighbor #2’s freezer. So, while I had the sandwich maker dirty, I figured it could make dinner for Sunshine and me.

We had our big city friends & our hermit friend over for a Filipino feast last night: pork adobo, garlic rice, baby bok choy, and toasted coconut ice cream for dessert. Our guests brought deviled eggs & St. André with crackers.
I’d already made the adobo the day before, which was quite the production — well over 2 hours to butcher the shoulder and brown the chonkz, but I’d heard it’s better the next day.
@wabi brought up coconut milk that wasn’t part of the recipe I used, but since the adobo seemed a bit on the salty side I added what was leftover from the coconut ice cream fixins & then some.
It was very tasty, but I guess I expected slightly more…. Exotic flavors? This was a hearty, delicious pork stew in which neither the garlic (an entire head) nor the vinegar seemed to come through, like, at all ![]()
That said, our guests had second and third helpings, loved the garlic rice & adored the bok choy.
The coconut ice cream had a great flavor, but next time I would top it with the toasted shredded coconut vs mixing it into the ice cream — all that toasty kronchy goodness softened up, and I don’t find shredded coconut to be a very pleasant texture.
Another lovely evening with friends.

Last night I made bowls with a base of toasted farro cooked in roasted-garlic chicken broth, topped with harissa-honey grilled chicken, shaved sauteed Brussels with jalapeño, pistachio, and pistachio oil, crumbled feta, diced tomato, dilled tazatziki, and shredded Dino kale vinaigrette, all drizzled with lemon tahini sauce and topped with crispy Green Goddess chickpeas.

Almost back-to-back activities night. Dinner was rotisserie chicken, sauté of green beans, grape tomatoes, roasted red peppers, and farro with fresh basil, Marcona almonds, and ramp salt, buttered herbed broccoli, and baked beans.
No energy to deal with making dinner tonight after a hell day at work.
So a tuna melt sufficed; Fritos alongside. A very orange meal, probably the color I most dislike. But it’s what I had to work with. ![]()
There will be chocolate for afters. Should have just started with that.
Clean out the fridge chili! A few different kinds of leftover beans, black and white, added to a small half onion and a half pepper sauteed with a small amount of ground beef that didn’t make it into yesterday’s bolognese. A small amount of leftover tomatoes plus the relevant seasonings sealed the deal. Served for some of us with rice, or with a leftover sweet potato or leftover pasta, sour cream or yogurt, options of cheddar and chives to top. Was really delicious with half a beer.
Because the beer was split between two adults or because half went into the chili?
Split between 2 adults! I thought about putting some in the chili but then decided would be much better to have alongside and I just added some bean liquid instead
My first ever recommendation for a store bought pizza. Crust was perfectly crispy, cheese layer was not boring, rosemary was nonexistent which is good since I detest, and there was no red sauce which I also detest. Added sliced red onion and hot and sweet jalapeño slices. Dressed with RPF and Mike’s Hot Honey. Could’ve eaten it all but limited myself to half because I’m a saint. Anyone going to TJ in the next few days should purchase. G&T with jalapeño slices.
