Weekly Menu Planning - October 2024

Hi everyone

I’ve come to the conclusion that my cooking mojo didn’t make it home with me, so waiting for it to get back from extended travels, lol.

The weather here has been all over the place, with sunny but cool days that are very pleasant for walking around, but nights that have dropped to winter temperatures. Wardrobe and menu planning have been a bit tricky.

I’m still eating out more than I’d like to as I catch up with various friends, but that will settle down eventually.

Some actuals for the past week plus:
— Dinner with friends: I made the appetizer (sardines rillettes – good even if you don’t like sardines!) & dessert (rum chocolate chunk brownies), they made chicken stew, sauteed shrimp, and salad.
— Quick Curry noodles with chicken and broccoli, using rotisserie chicken and leftover steamed broccoli.
— Rotisserie chicken, steamed broccoli.
Salmon burgers from COTM NYT — really good! Thanks to @MunchkinRedux for the rec.
— Leftover mujadara with butter-roasted salmon (also COTM NYT)
— Spanish dinner out with a friend
Beef rendang and Sichuan salads I picked up in Flushing
Modern-ish Indian food out with visiting friends

I finally did a quick freezer inventory, which is just as well, because it turns out I still have a bunch of things to use up in there.

Ideas for the coming week:
Vietnamese grilled pork – found marinade in the freezer, woot! Will add slaw and rice. Pork and slaw from COTM Andrea Nguyen / VFAD.
— Sushi bowls – Fish tbd (Brown butter scallops or Wasabi butter roasted salmon), avocado, snow pea salad
— Fish chowder for DOTQ from COTM NYT using a suggestion from comments to add lemongrass and coconut milk
Salmon burgers or Fish cakes again with rice & some green veg, or maybe Arroz Verde

Wish list:
Shiu mai burgers – have been obsessing over these since I came across them
Pakistani pot roast / pasanday – would also motivate me to bake some crusty bread
Soy sauce chicken – would love to get closer to the Chinatown version.

Made “nutella” energy balls, almond fudge (badam katri / katli), and another Indian sweet for Diwali (magaj / gram flour fudge) to send my nephew and my friend’s daughter in their care packages, which I FINALLY sent off after excessively overthinking them haha.

Next project is to think about what I want to make for Diwali with friends – 1 app, 1 main, 1 dessert for my friend’s party most likely.
