Weekly Menu Planning - April 2026

Hi everyone

We’ve had schizophrenic weather here in nyc, from glorious and warm with flowers blooming everywhere, to cold and rainy.

I’m trying to reset on eating more beans by weaving them in regularly again. Also on healthy breakfast / snack options to have on hand: I’ve restocked kefir, yogurt, and cottage cheese, plus I made high protein dhokla (steamed lentil & rice cakes) and cottage cheese quiche-y muffins.

Actuals for the past week or so:
Wanja jeon / Korean beef & tofu patties (COTM Maangchi) + Umami noodles with shiitake mushrooms (COTM Andrea Nguyen) + spinach
— Potato pierogies tossed with brown butter, caramelized onions, and sautéed mushrooms
Adana kebab + Vinegret salad
Lamb chop with Harissa chilli crisp + Skordalia (mashed potato with garlic and vinegar) + Broccoli with garlic (COTM Jose Andres)
Chhole (chickpeas) + charred flour tortilla + spinach
Piyaz / Gigantes beans stew + Fassolaki / green beans braised with tomatoes + Tomato toast / Pa amb tomàquet / Pan con tomate (COTM Jose Andres)
— Grillfest with friends — Colossal shrimp with garlic and miso, octopus with potato / pulpo alla gallega, lamb chops, asparagus and mushrooms, eggplant and zucchini, burrata and tomato salad (grilled bread too, which I love).
Mini taco crawl — delicious, and with leftovers!
— Gram flour crepes / Besan chilla + spinach raita + zhoug

I’ve been sending my mom pics of spring blooms I come across in an attempt to lift her spirits after some recent family losses — sharing a few to brighten the day.
