DRIED BEANS/LEGUMES/LENTILS (or canned) - Your favorite recipes / applications?

Back at it.
I have gigantes beans, chickpeas, and mixed lentils soaking.

Chickpeas are meant for chhole, which I’ve been craving for a while.

Gigantes beans for salad or an easy braise recipe from COTM Jose Andres.

Mixed lentils will be ground and fermented for dosa / crepes and other stuff.
