I make a cold, uncooked beet salad that has northern roots (haha) without potato. Amazingly it has shredded coconut and sesame oil in it. Different, but delish!

I liked my adaptation of the Vikalinka recipe.


I substituted green onion for shallots, and concentrated sour cherry juice for pomegranate molasses. I omitted the mustard. I added some white balsamic condimento.

Chickpea roasted red pepper salad.

It needed a little jujjing for crunch and color but I enjoyed it.

I added golden raisins, chopped pecans and radishes, and later “Israeli feta”.

Greek salad with halloumi because that’s what I had. Paired with iced tea today because I’m pretending it’s spring.
