EASY TURKEY MEATLOAF

If you like ground turkey, and aren’t a reluctant consumer of it like me, you may like this recipe. For me, it didn’t have enough other flavors going on to mask the ground turkey flavor. It was moist enough and I liked the glaze on top, but I had to add more ketchup to mine as I ate it. I would grate the onion next time (not sure there will be a next time) because I didn’t like the texture of the chopped onion in it. My daughter ate it on a hamburger bun as a sandwich, which I may have liked better.

GINGER SESAME GRANOLA

I’ve been making “regular” granola with ginger and cardamom, and the KAF pumpkin spice granola with crystallized ginger, so this seemed like an interesting hybrid. I used the optional egg whites and made a few tweaks:

  • 2 T sesame seeds (straight from the jar) rather than 1/3 cup
  • chopped walnuts instead of sliced almonds - I don’t like sliced almonds in granola
  • Bake at 300F for 1 hour, no stirring

I tasted a few clusters as it was cooling, and it was tasty. Neither the ginger nor sesame flavors were super prominent though.

I’ve never eaten meatloaf and B hasn’t eaten it in decades. I’ve been thinking that Spring Onion might like it but if he doesn’t, we’re stuck with a stoopid loaf of meatloaf. I wondered if turkey might be more to his liking, but I have no clue. I’m generally scared of meat but I might try to tackle this soon.

I love regular meatloaf, but we are really doing our best to cut down on red meat at home, so turkey it is. My daughter was not keen on it when she saw it come out of the oven, but I put a slice inside a Martin’s potato bun and she devoured it. I will probably keep looking for other recipes that mask the flavor of the turkey (like the middle school tacos upthread) - I know some people like the flavor of ground turkey, but I’m not one of them.

I used julienned collards and Aji Amarillo peppers, doubled the spices and added Whole Spice “Hot Curry Powder” and we still felt the flavors were too mild.

Even if you don’t love meatloaf when it comes out of the oven the cold leftovers with or without bread are delicious cold with either mustard or mayonnaise or both. I am not a big meat lover, but boy do I love the leftovers.

Good to know! I’d added this to my ever-expanding :crazy_face: recipe box & briefly considered making it today, but I think I’ll stick to my own curry recipe instead :slight_smile:

Looks good, too bad it was low on flavor. Though 2 garlic cloves and 1 tsp ginger for a pound of shrimp seems very low relative to my own inclinations for aromatics :joy:

I used to think I hated meatloaf, but it turns out I just hated my mom’s meatloaf. :joy: If you look at it as a big rectangular meatball, it might not be so scary. This Italian-ish one is what changed my mind, but unfortunately it doesn’t work well with just turkey.

I haven’t tried it myself, but SK’s turkey meatloaf for skeptics has good reviews.

You might not be familiar with me—I’m a reformed vegan/vegetarian and now a pescatarian so any form of meat is anathema to me. If Spring Onion doesn’t like the meatloaf, B will gladly eat it (I think).

Thank you @LulusMom1, @ieatalotoficecream, and @truman for your input. We need to fatten up Spring Onion and I’m feeling a bit desperate.

Honestly, and this is purely my opinion , if I were trying to turn someone on to meatloaf, I would not go with turkey meatloaf. I would go with a more typical recipe with a pork and beef mixture. If you’re wanting to incorporate specifically ground turkey (and not meat in general) into his rotation, I might go with turkey tacos (middle school tacos upthread for example) or the turkey burger recipe in this thread (with a pat of butter and cheese inside it). Both of those, in my mind, are more kid friendly and take the focus off the actual meat, because of the seasoning on the taco meat and all the toppings, and because of the sandwich-factor of the turkey burger as well as the toppings and the richness imparted by the butter and cheese. All that said, though, my daughter accepted the meatloaf as a sandwich and loaded it up with gravy and cranberry sauce and even black beans (??) in the bun again tonight and gobbled it up… So it may be worth a try with your kiddo!

Hard agree. Ground turkey is particularly unappealing in meatloaf. If your Spring Onion likes sausage (or even vegetarian/Impossible sausage subs), try a recipe that uses breakfast or Italian sausage instead of or in addition to ground pork - IMO it makes any meatloaf more appetizing.

If ground chicken might be a more palatable option, I have a few chicken meatball recipes that have enough other stuff going on that they’re not really chicken-forward. Happy to share, but I will stop going off-topic on this thread!

I was a vegetarian for about 20 years; I totally get it.

Buttery pasta with lots of cheese might help with putting on some pounds (it’s certainly helped me :roll_eyes:).

I made a Korean turkey meatloaf once that was pretty good.

Yes, I have a great chicken meatball recipe too. I haven’t made it in a long time because it grosses me out to grind up the chicken in my Cuisinart and same for cleaning it. It’s hard to find a good source for ground chicken.

BLACK BEAN BURGERS

A winner of a recipe. I prepped these Sunday night and cooked them tonight. The addition of oats makes for a sturdy burger (and I didn’t taste them at all). My new Cuisinart didn’t quite get all of the dried mushroom chopped up, but I didn’t follow the instructions of pre-chopping, so that was my fault. The addition of cilantro was great, and I liked the slight crusty exterior and soft inside once cooked. I made fresh guacamole to top it with. My bean-loving daughter was a huge fan. We’ll eat these often.

We made these, and as die-hard carnivores, didn’t hate them. Lol. While I haven’t yet made them a second time, I have kept the recipe in my files all this time, which says something.

SHEET PAN GNOCCHI WITH SAUSAGES AND PEPPERS
We liked this a lot - super easy and good results. I used pork sausage, which is a rare treat these days, from a local butcher along with Costco gnocchi. The peppers and tomatoes roasted up nice and sweet. Some of the gnocchi was soft and some was crispy- nice textural variety. I’ll try this next time with chicken sausage and see how it is. A keeper for sure.
