Favorite recipes for ground chicken

Spinning this off from a discussion on the NYT recipes discussion: what are your favorite recipes for ground chicken?

Spanakopita meatballs. I usually use more feta (maybe a whole 8oz block?) but there’s so much spinach in these that it neutralizes the extra cheese. :laughing:

Similarly, chicken-zucchini meatballs. A standard meatball mix with the addition of minced shallots, grated and wrung zucchini, and a good dose of cumin.

“Tsukune” are a true favorite type of yakitori of mine that I almost always order when I go to a yakitori shop or izakaya in Japan. This is a good recipe for them. At home I don’t make them on skewers but either as meatballs or little burgers. They’re great over rice or even on slider buns.

I’m making (a cheaters version) of larb with ground chicken tonight. I love it. I used to eat a fair amount of ground turkey, but I guess my tastes have changed, as I don’t like it as much these days.

What makes it a cheater version? I have a great recipe for turkey laab and it’s not very involved at all if you are interested.

White chicken chili, Sloppy Joes, fried rice.

I have also made turkey Swedish meatballs, which we like. My indie grocer sells a ground turkey/ chicken blend.

I haven’t tried Marry Me Chicken yet. Here is a meatballs version

I don’t do the rice powder, for one. But this one is very easy, and we love it, so I’m good. But thank you!

Yeah, the rice powder is the biggest PITA, but to me the dish isn’t the same without it.

I usually sub ground turkey for chicken, but the dishes work both ways.

  • Tsukune (Ivan Orkin’s recipe from Gaijin, or others with the increase of ginger and scallions in the meat mixture)
  • Thai Larb (I’ve used Leela P’s recipe, adding lemongrass)
  • Kheema (I compensate for the chicken with various umami boosters)
  • Chicken seekh kababs (like this)
  • Chicken Adana kababs (like this)

We also like ground chicken tacos quite a bit.

I’ve made the whole recipe and it’s excellent, but most of the time, I just make the meatballs and serve on pasta with my own bechamel.

This recipe for Armenian meatball/ kololak /kofte soup calls for turkey. Could sub chicken.

I really like thukpa. This one contains chicken meatballs.

The tomato paste in the mix really amps up flavor. They are still good sans pork, too.

This is another favorite subbing chicken. I use the recipe as a jumping off point and tweak away (add lemongrass and herbs to meatballs, etc). You can cook the meatballs in the simmering broth.

Chicken Meatloaf… I’ve made it a couple of times. Its better with a Bechamel Sauce.

I use minced chicken to make Pad Kra Pao for the SIL who doesn’t eat pork. But like you I prefer turkey mince, thigh to be precise.
