SPICED CHICKPEA SALAD WITH TAHINI AND PITA CHIPS
I made this salad for lunch today and we loved it. The chickpeas will be going on a steady rotation for lunches for us - they had a great texture - kind of crunchy on the outside while retaining the creamy inside - and great flavor. The tahini sauce I could (and did) eat with a spoon on its own and would go well with the recipe I posted in the previous post. I didn’t love spinach with this but I used baby spinach so maybe a heartier green would work better. I used the minimum amount of oil listed and I think it could probably be further reduced; I’ll play around with it. Another keeper…
PARMESAN CRUSTED SALMON CAESAR SALAD
This was a leap for me because, I have to be honest, seeing the words “parmesan” and “salmon” near each other did not really appeal to me. But, I had bought salmon and I have been craving Caesar salad the last few weeks, and this was a 5 star recipe, so I gave it a shot. And wow, I’m glad I did. I used a different crouton recipe (from Natasha’s Kitchen) but otherwise stayed true to this recipe. The shortcut Caesar dressing is a more than reasonable facsimile of the real thing, and somehow the parmesan manages to help make a flavorful crust on the salmon without turning on the “don’t mix cheese and fish” part of my brain. I had to cook my salmon far longer than the instructions to get it cooked the way I wanted it inside, but it remained moist with the Caesar topping. All in all, a dead easy recipe that satisfied the whole family.

Wish I’d taken the leap sooner! It was fantastic! And I’m so converted to homemade croutons now too!
In the last few years we’ve acquired both a bread machine and countertop convection oven. Between the two, we enjoy having a crouton-making factory in our kitchen.
I am wondering what length of time the guest links are a good link. Hope that makes sense.
I ask because several listed here that I was interested in were already locked. I have not seen that question asked, so here I am asking it.
For example the Harissa Honey Pork Tenderloin link is no longer open, it is locked.

TZATZIKI CHICKPEA SALAD
I’ve been looking for ways to up our bean and veggie consumption and eat less meat. I made this for lunches and was pretty pleased with it. Mine ended up a bit soupy after a couple days, I guess from the cucumber, but it held up otherwise. I might dice the cucumber next time just for my own textural preferences but it came together easy and had good flavor.
BRUSSELS SPROUTS SALAD WITH POMEGRANATE AND PISTACHIOS
Another lunch salad. We really liked this one, especially the pop/tang of the pomegranate and the crunch of the pistachio. I found the Brussels a tad bitter (personal preference) so I liked it much more once I topped it with some of the tahini sauce from the roasted chickpea salad up thread. I’d definitely make it again, with the tahini sauce to serve with it.
CHEESY SPICY BLACK BEAN BAKE
Another NYT recipe that’s barely a recipe… But makes me feel like I’m serving an actual dinner instead of a plain can of black beans (although, to be fair, my daughter would be perfectly happy with that. She loves all beans in almost any form, including plain from the can). A hot dinner ready in 10 minutes and can be served with rice or in tortillas or as a side dish. I like the smoked paprika in this. The cheese amount listed is excessive for me, so I cut it back. Served with guac and sour cream tonight.
I love this recipe. So quick and easy … and good.
Your picture reminded me I forgot cilantro!!!
I think chopped green onions would be great too, or instead of, cilantro.

As fans of paprika, we both liked this - with an asterisk:
*DH thought the sauce on the side was needed for the spuds (and I know some members of the community thought the sauce was the best part), but I thought it was overkill. Will make again happily, with the sauce remaining optional.
