I’ve had 2 who ate tomatoes right off the counter.
He also enjoys pita bread, fried chicken, bacon, pepperoni grease, and butternut donuts. Weirdo.

I had another who loved cantaloupe and carrot cake.
I knew snow was coming in.
Didn’t know when.
Didn’t know how much.
But Saturday was gonna be a comfort food day.
(Unless the power went out. Which it didn’t.)
A small chuck roast was picked up on Thursday for Saturday dinner. I usually go with Mom’s Lemon Pot Roast but wanted another favorite…what I saw posted on an old old old old OLD AOL food board back in the mid 90s:

Couldn’t find it posted elsewhere by me (I know it was on Chowhound long ago, but those boards are long gone), but someone appropriated it for a post on Food dot com word for word. I’ve made changes since then.
This was perfect for a snowy day with a cuddly cat who likes crawling under my lap blankie.
There was wine.
Again with the crispy chicken thigh, this time with Dijon-dry vermouth-cream sauce with leeks and roasted mushrooms. Served with wild rice with aromatics and broccoli. Yum.

So much of my memories of departed loved ones centers around food. I think we all can relate. Sorry for you loss; keep those wonderful memories in your heart and in your kitchen.
Kitteh looks like my late soulmate, who died 5 years ago today. Thankfully, the current crew likes cold weather snuggles and at least sniffed my rigatoni tonight.

He’s gotten more cuddly ever since we lost Alfie. But he stays on the lap, never held up on my body for a scritch-scratch. So my legs can get numb. LOL
I love chicken thighs. Those look fab!
That’s it, but I don’t usually make a 5 lb. chuck roast, so I cut back on the amount of beef stock by half, and the red wine by half as well. I also add more corn and peas so I have more veggies on the plate, and usually omit the celery, although I added about half a cup this time.
This time, I also poured the liquid into a fat separator to remove the excess oil, then added the peas and corn to simmer, and added a bit of a flour slurry to thicken the gravy/sauce.
