Just stopping by to vent. I have eaten at home ONE NIGHT in over a week, and I am OVER IT.

(Wasn’t that long ago that I ate out many nights every single week, but I just don’t enjoy the richness and saltiness of restaurant meals on repeat anymore.)

Zucchini is underrated. When it is thick and caramelized like that it’s delectable. Your guy knows how to cook!

Unless a half dozen taco truck cabeza tacos count, and a couple of Carl’s Jr chicken sandwiches, I haven’t had a restaurant meal since March 2020. We don’t do take out. If you think you are OVER meals out, let me tell you about how OVER I am of my cooking. Not venting. But looking forward to someone else’s cooking.

That’s part of it @pilgrim - my brain knows the pandemic is not over, and I have low grade anxiety arising from this.

I should have explained that I have had a lot of friend reconnecting driving the week, which has been lovely. Just too much for a week stretch, but still.

But I do understand what you said, and I’m sorry you are on the other end of the spectrum - it was insensitive of me.

We did do takeout a couple of times a week, though, even when we were cloistered (when I was in CA). But I know others have not (my parents, for example, have only done it on the odd birthday when we insisted).

You are not insensitive in the least! We just find it so easy to dredge up a meal at home that it seems more work to go out. We don’t stand in line, and in SF reservations at target restaurants can be several weeks out.

Or, I’d say that you are an amazing mom making wonderful memories for her kiddo. Because life’s better with pie.

What a good reminder that we are all experiencing these weird times in different ways. I see differences among friends and family: Circumstances are often really different for us depending on where we live and what’s happening in our households.

Hey, I’d bring you dinner if we weren’t on opposite coasts.

Mom and I had dinner out last night at one of our favorite places. We had actually tried a couple of times in recent months but the waits were too long (talking 1-2 hours!). Tonight was a record short: only 20 minutes!

Baked scallops for me, baked seafood combo for her. Fried zucchini to share. Couple of cocktails. Cheers!

We did a lot of takeout during the shutdown, in part because we wanted to help restaurants struggling to survive. Also, as I write reviews for a local online site, I continued to do reviews of places doing takeout, to get the word out, places where we would normally have eaten in. I’m still doing those reviews, even as they are all open again for outside and inside dining. We ate indoors a couple of times right before we all learned of the Delta variant, but it’s been takeout and very occasionally outdoor eating since then. I still feel the need to support our local restaurants.

Those empanada wrappers looks like a real time saver, and it appears that they gave you a great result. Did you buy them at a regular grocery or a Latin market? I’m going to go search for those and maybe turn one of the 4 hubbards I managed to grow this year into empanadas.

Thanks! Yes, they are a real time saver, and we are very happy with the results. The empanadas came out nice and crispy and flaky like phyllo dough. Mrs. P just crimped them with a fork and brushed them with egg wash to get the shine. She just through them in the oven for 20 minutes.

She bought them at Shop Rite, so I would think that any Supermarket would carry them in the Spanish section where you see Goya products.

I’ll take a look for them. We have goya in the regular market in the shelf stable section, but I’ve never seen any “international” section of the frozen area. However, we do have a Latin market in town, so I may hit them up too. Thank you.
