The achiote has a very strong and particular flavor. I haven’t had it prepared by someone else but maybe once in my life, so I can’t say if it was very authentic. Otoh, I sent out my h for a pork butt and he came home with a loin, and I didn’t think it would work. Given how lean it was, I thought it would be absolute leather at the end. And I was pleasantly surprised. It was just shredded and soft, but without so much fat. Which is a positive in my book. 2 1/2 lbs, 300 for 3hrs. Braised in some water as RB instructs.

I’ve had it quite a few times, and i actually have achiote in the house! however, it’s in these really hard pellets, and i’ve never been able to get them to break down easily, so i’ll probably get some achiote paste or powder from a nearby mexi-mart. Can’t wait!

Her dad is a plastic surgeon who went to school with the senior doc in this practice. I’m sitting in the exam room and texted my cousin. Hey I’m in Dr. so and sos office. He texts back went to school with him. He was top in the class. I look up at him and say you know my cousin, he’s my cigar buddy. Just after discussing my cigar/tobacco usage. He looks up and smiles and replies he was top in the class.

Well it wasn’t for dinner . Mt Shasta is beginning to open up . Was taken out to lunch at the newest and my favorite brew pub . Pipeline. Had a great burger and beer. No weirdo masks , gloves , or plexiglas. Just social distances in booths and tables . First meal out in three months . It was so good .
Seeing people wear masks makes me happy.

Yes and no . I’ve seen a lot of gross masks and bandanas that look like dirty underwear covering their face . They are only good for one use . Throw away or wash .
I made vodka sauce for the first time today - I love it, but have never actually made it.
We usually have pasta on Fridays while the kids have pizza, so I started the sauce this morning as I had a bunch of calls in the afternoon.
But… what I didn’t know there was backyard (distanced) entertaining occurring tonight with pizza delivery.
So… I had my pasta anyway, while watching a movie “together” with my college roommate.
The sauce is DELICIOUS. I made a double batch, and haven’t added the cream to the lot of it so it can be frozen.
Ooh - and a first attempt at fried zucchini flowers (from the garden), stuffed with a bit of ricotta.

Don Pepe II reopened for takeout just in time for my weekend birthday celebration. We enjoyed twin lobsters stuffed with scallops, shrimp, and crabmeat; scallops with shrimp and crabmeat stuffing; clams casino, and crispy Spanish chips. It all went great with an awesome Ridge Zinfandel.
OOF! Now that’s a celebratory meal!
