BF is currently baking sticky buns and I will be cooking Indian food later.
For now, a Tanqueray and tonic on the back patio while it’s still warm.
Yes they are wild fresh small oysters.
A bit of work in the office.
Felt good to get out for a few hours.
Dinner was uber-simple:
Cheeseburger fried in duck fat on a lightly toasted brioche bun with ketchup.
A “wedge salad” (just a wedge of iceberg to pretend I was being healthy) with homemade Russian dressing. Because I woke up wanting Russian dressing.
Tater chips and wine. And it was good.
I was dreaming of Ruffles and French Onion Dip last night. Haven’t had any snacks since the shutdown. Also jonesing for some Doritos.
Jack would not like being drown in Gin.
Husband’s birthday, so…

And yellow cake with chocolate frosting…having gradually moved from milk chocolate to semisweet.
Rice and beans
I know, but its one of my favorite glasses. That and I bought it at a specialty shop and its price justifies multiple uses!
Butter chicken, a very spicy green chili channa masala, and bhel puri. Rice and naan not pictured.
The channa was a new recipe from an Indian YouTube channel. It was very involved-- had to do a double coat of corn starch on the chick peas and deep fry them before adding to the sauce. There were some odd ingredients (I thought) in this authentic recipe, including soy sauce, ketchup, and Chinese chili-garlic sauce. But man, it’s one of the best dishes we’ve ever created.
BF made Amish sticky buns for dessert.
There were several gin and tonics.
I needs to use up a bag of fresh spinach. Sautéed spinach with shallots, artichoke hearts, sun dried tomatoes, then a bunch of parmesan. Piled it all into a round of puff pastry. Added two eggs toward the end of cooking (excuse the broken ugly one).
Love the cheeseburger display.
Mr Bean was working on his boat while it was out of the water. One of our favorite seafood stores was close by so he swung around to see what was going on. They were open and since there were no other customers in the store he went in. They had scallops fresh off the boat this morning. Needless to say we had scallops for dinner.
Crudo with fresh orange and lemon juice, ginger, soy, rice wine vinegar, sesame oil and spicy chili crisp. They could have used a bit more mint thats all we have right now.
Scallops with sautéed shredded brussels sprouts and prosciutto.
Korean style fried pork belly and pickled daikon over rice, and a slightly overdressed salad of arugula and cherry tomatoes.
we’ve been eating take-out the last 3 nights, writing short reviews for places that are still open for delivery/take-out in our neighborhood, trying to support these businesses and get the word out. Tues night was from an Irish pub where we picked up Irish pizza and corned beef & cabbage with mashed taters, and a bottle of wine to go. Wed was Thai by my sister’s house, where the lady told me we were only her third customer the entire day. And tonight was a Guamanian place I’d reviewed before, but they’d closed and reopened right before the lock-down. The owner himself delivered our dinner (fantastic fried chicken, pork belly, red rice, roasted veggies (to die for), pickled veg, and a side of potato salad. All totally delish. Got a bottle of wine from there too. Yep, if we make it out alive from this time period, we’ll be 500 lbs. and in need of rehab.
In addition to the reviews, we have a fully stocked fridge and freezer, so there was absolutely no need to cook. But i was bored as hell at my (living room) job and needed a project.
So I took the laptop with me into the kitchen and started prepped enchilada sauce from scratch: toasted dried chilies and garlic, soaked the chilies, blended with broth, herbs/spices, strained and cooked it until it darkened, added more broth, then simmered. A multi-step dish that was perfect for days like this.
Then i made a small batch of carnitas to go with. This’ll probably be dinner Sunday night.
