What's for Dinner #55: The March Forward Into Spring Edition - March 2020

Got pork chops and a bunch of apples in my Imperfect Produce box so dinner was pan fried chops with sauteed apples and cabbage. The pork could have used a bit more seasoning but otherwise, was pretty good. DH is not a big cabbage fan, but he said it was good.

We finally cooked a decent meal: DH sous vided and roasted a sirloin tip roast, while I made dilled creamy cucumber salad, root veg fries, and buttered asparagus.

Is sirloin tip the same as tri-tip?

Thanks! Even the toddler ate some, and he’s sensitive to meat textures. Overnight sous vide would have been even better.

Grilled chicken breast, grilled balsamic marinated zucchini, provolone. All I was missing was roasted red peppers.

Being that I am a Minnesotan Scandinavian, I had to make waffles tonight since it was Waffle Day in Norway, Sweden, and Denmark. Added bacon as a side (because everything is better with bacon), toppings were lingonberries, homemade sour cream, and our own maple syrup. Truth was I wanted to pull out the heart-shaped waffle iron and make something for my Dad that reminded him of his Scandinavian roots.

Anyone else celebrate Waffle Day?

Thank you! I thought it was some type of round. Not my favorite taste or texture. I have some creative uses for leftovers tonight though!

Finding it hard to have a normal routine having been indefinitely displaced from home…

Lots of cooking, though not very organized.

Some recent meals:

Dal dhokli - lentils with noodles - comfort food. Ghee, peanuts, onions on top and buttermilk on the side.

Porchetta-spiced pork chops with polenta and mushrooms.

Chicken bihari kababs (that I didn’t take a pic of, and which might have been my best work yet) repurposed into kathi rolls (tortilla instead of paratha, egg, spices, garnishes) with leftover indian vegetables - cauliflower and green beans. Kathi rolls were spot-on, which was a pleasant surprise because they rarely taste as good at home as the junky takeout version.

Adapted Chrissy Teigen’s carrot soup - lemongrass, shallots, carrots, plus some leftover roasted butternut squash and some red lentils for protein.

Batch prep of pork chops - marinated in a few different ways - vietnamese, spanish, mexican, and another round of porchetta seasoning - before freezing.

Will do something similar for a couple of packages of chicken. Probably kababs because those turn out so well and repurpose beautifully, and vietnamese because I made extra marinade.
