We have a new-to-us source for Alaskan wild sockeye salmon and it’s been a boon for dinner when time/creativity/cooking mojo is low (I’m guilty of all 3 lately).
I’ve pan-sautéed, oven-roasted, air-fried.
Tonight, I oven-roasted a large fillet and topped it with a piquant lemon caper sauce. B got a leftover baked potato and organic local farmstand salad dressed with green goddess and Spring onion got udon noodles and undressed organic local claytonia (a delightful nutrient-dense micro green that he sampled and loved at the farmstand this past weekend) as sides. My dish was some combo.

Chorizo and beef albondigas burger. Buttered and toasted ciabatta roll slathered in aioli, little gem, roasted piquillo peppers, sweet onion, the patty, Manchego cheese, more slathering on the top bun. Extra crispy ff fries, more aioli for dipping and a few Spanish queens.
Tonight’s dinner had to be leftovers (from the freezer), as I took Neighbor #2 to the doctor this afternoon. She got GREAT news and wants to begin cooking her own meals. Tomorrow, I will make up a bunch of the Hot Pockets she likes. I’ll put them in freezer bags (as a fall back).
Leftover Mango Chicken, Rice and Brussels Sprouts (I was out of broccoli).
I’m on a “low fiber” diet for a medical procedure in a couple of days, so I cooked up some Greekly seasoned chicken and white basmati rice, with mushrooms and green beans (somehow considered low fiber on the diet list), and feta. It’s the first time I’ve cooked white rice in forever, but it worked out well, not sticky at all. Biryani next time?
Weeknight Curry Rice with Eggplant, Spinach, and Lotus Root from “Korean American” by Eric Kim - Korean/Japanese inspired curry where you stew pork belly, eggplant, carrots, lotus root and onions for an hour and afterwards add a slurry of instant curry mix (Golden Curry) and baby spinach. Served over rice

A fabulously sunny day in Happy Valley! After my PT I drove a couple of my clients around. Felt good to be back in the saddle / driver’s seat again ![]()
We grabbed a sundowner beer at the beer garden — Czech Pilsner for my dude, a crisp rice lager for me. The two girls near us had an adorable shepherd dog with them & we started talking. Turns out they’re in the same local Facebook food group as I where they avidly follow my reviews (shucks), and one of them is going to visit her fiancé in Germany, where he’s doing an intensive language class in May. What a koinkidenk!
Dinner was Sam’s Club exxxxxtra pepperoni Detroit-style pizza that was garbage — not as floffy or crispy a crust as from our local pizza parlor. Just an overload of subpar carbs, which perhaps shouldn’t have been a surprise.
But it was an easy meal before a former grad student of my PIC came over, who’s in PA visiting his mom. We initially had hoped for the first fire on the patio, but temps dropped rather steeply, so we stuck to wine and herb in the playroom ![]()
He left early, and I made up some shrimp bites from Aldi in the AF & whipped up a dipping sauce of chopped capers, peperoncini & a few drops of their brine, mayo, mustard, ketchup, lemon juice, hot sauce, fresh dill. Sauce was better than the shrimp bites.
Thankfully, there will be much better food tonight! ![]()
