What's For Dinner #115 - the Dumb Rodent Month Edition - February 2025

Beautiful

We enjoyed another excellent dinner at Alfie’s in Warren, NJ, including surf and turf; strip steak with a peppercorn brandy sauce; fried calamari with Italian hot sausage and hot cherry peppers; portobello mushrooms with a balsamic reduction; excellent escargot with artichokes; It all went great with an excellent cabernet and red blend.

Pork tenderloin, seasoned with pork seasoning, seared and roasted. A splash of wine, maple syrup, mustard sauce. Gourmet mixed rice, onion, carrot, baby bells cooked in chicken broth with a healthy dash of Dash garlic & herb seasoning and parsley. Blood orange, fennel, avocado, over greens, sprinkled with red onion, fennel fronds and a sherry oo citrus dressing. Only water.

Our neighbors had us over for dinner (cheese fondue) and I brought dessert:

And a bit of cornstarch and a dash of garlic granules, onion powder, paprika orcall three?

Okay, maybe not ten. Five. But they’re all great!

Cauliflower Adobo

Notes: This is a winner, but it takes longer to cook, and takes more liquid, than indicated.

Tonight’s dinner was leftover turkey from Christmas, sweet potatoes, corn, stuffing, gravy and cranberry sauce. All in all – a nice Sunday dinner.

Kimchi-Braised Short Ribs from Korean American by Eric Kim - really nice version of kimchi jjim with bone-in short ribs braised for a few hours in the oven with cabbage kimchi, onions, garlic, gochugaru, soy sauce, sugar, toasted sesame oil and water. Once the meat is shredded you serve it over pappardelle with parsley and parmesan

I friend gave me 6 eggs from her cousin’s farm. I fried 2 and served them atop Ojaxura with Mushrooms leftover from Saturday’s dinner at a Georgian restaurant. Ojaxura is a traditional family dish of sautéed potatoes, mushrooms, onions and garlic, and often includes pork. This was a vegetarian version. I fried the eggs perfectly for me - crispy edges and runny yolks.

I love cauliflower. I could do that.

What can you add to my list of killer cauliflower recipes?

Two more - forgot to look in my “soup” folder.

Cauliflower cheese aka gratin

(Not mentioning the many indian takes, including in dal)

(And NOT Otolenghi’s cauliflower cake. No to that.)

Here there’s a whole thread:

The diversity of food is amazing - and OMG, so much I would want to try!

How was the yak chili? I love game meats and I am suitably intrigued.

I personally would have started with dessert and worked my way back but that’s just me

Is Dumb Rodent a metaphor?

Asking for a friend.

I thought this was supposed to be Year of the Snake.

By the way, I visited Wiarton Willie last summer.

The real live Wiarton Willie was not available to meet.

I really liked a roasted whole cauliflower with tahini and pomegranate from an Armenian restaurant in Toronto recently. It tastes better than the Ottolenghi version.

Well Wiarton Willie didn’t see his shadow yesterday but Shubenacadie Sam saw his so who knows how long winter will last. For the record, Willie was sleeping on the job during the 6:00 news last night so I would take his prediction with a grain of salt.

Wiarton Willie was the outlier. 3:1.

But it is possible that Ontario could have a completely different length of winter than the Maritimes, Manitoba or the USA, with all this global warming.

I don’t even think Phil knows a long winter from a short winter. Pittsburgh is usually 3 weeks ahead of southern Ontario when it comes to tomato season.

The yak chili was delicious. Not particularly gamy at all, and just the right amount of cumin.

I’m not much of a dessert person (evidenced by still not having tried the orange cake :grimacing:), but you’d love our potlucks. The dessert table is usually much larger, but yesterday it seemed peeps were in a decidedly savory mood in their contributions
