What's For Dinner #115 - the Dumb Rodent Month Edition - February 2025

Phil rarely gets it right. I heard that he’s 17th on a list of 19 animals who “predict” winter correctly. And yet they still drag his butt out of his burrow every February. People, it’s FEBRUARY! There’s gonna be more winter, for cryin’ out loud!

Which also means we should still be wanting comfort foods. At least I know I do! But maybe you’re ready for outdoor foods (or live in a southern or western climate where you get that almost all year round!).

What’s on your tables this month? Besides chocolate? :wink:

I’m looking forward to Mardi Gras and Carnival food at the end of the month.

I usually make gumbo at least once in Feb. Maybe I’ll finally make a Lasagne di Carnevale.

It’s also Black History Month, which I plan on celebrating by supporting local Black-owned businesses. One woman here prepares amazing oxtail stew every weekend, another one makes fabulous pernil, and we’re about to get a new Dominican restaurant :heart_eyes:…for the nights I don’t feel like cooking, that is :slight_smile:

King Arthur Flour “No Fuss Focaccia”, topped with thinly sliced red onion, Parmesan, and pistachios (inspired by Pizzeria Bianco):

We also had cheeses and salami, olive oil and red pepper for dipping, and adult beverages.

A very basic dinner after some shoveling and a couple of errands: Gorton’s beer-battered fish filets on a very lightly toasted brioche bun, with Comeback sauce and red leaf lettuce.

Even simpler? A wedge of iceberg with Target honey-mustard dressing.

There was wine.

Seasoned ground chicken hard-shell tacos with sriracha mayo, pickled-pepper queso, shredded lettuce, toms, and chipotle vinaigrette. Beans and rice.

We enjoyed another excellent dinner at Drew’s in Keyport, NJ, including duck cassoulet; spicy shrimp and grits with habanero peppers; mussels and andouille sausage; fig, gorgonzola, and Bentons bacon flatbread; fried calamari. We also had lobster gumbo (not pictured). It all went great with a couple of excellent red blends.

Kielbasa soup from the freezer. Warm sourdough baguette with butter. Spinach salad.


Yes that is water, but there was a celebratory drink. Happy wet February.

Fried calamari. Soaked in milk for a half hour . Dredged in semolina flour. And 00 zero . Fried in vegetable oil. 350 degrees. Cabbage salad…

No . It was a good 2 lb pack of frozen Monterey bay squid. I enjoyed cleaning them .
Wanted to relive the calamari from carniglia bros . Santa Cruz wharf . And i thought making pizza was hard . They were bland and crunchy.

The leftover broth from the burrito soup I made for lunch a couple of days ago, simmered with halved cherry tomatoes and meatballs.
I had ground beef because at the butcher counter the other day, I got some ground lamb and two kinds of fish. When I got home, there was also a pound of ground beef in my bag that I didn’t ask for. I did pay for it, I froze most of it for later. The white pieces are chicken from the soup.

I had intended on going to a movie screening last night and the filmmaker was present for a Q&A after. Movie goers were advised to buy tickets in advance. Guess who didn’t do so? :upside_down_face: Unfortunately for me the screening was sold out so dinner plans got kaiboshed. I could have gotten take out or I could have made dinner. I opted for making dinner since I had a little basil left from salads earlier this week. So I started with a caesar salad (still no croutons in this house), then onto fettuccine al pesto then hot chocolate and a butter tart for dessert.

Comfort food… All the kids are home this weekend and Daughter #3 made chicken thigh congee.

She had bones from 8 thighs she’d baked the prior week plus 4 raw thighs, so she boned those out, too, then simmered all the bones a couple of hours for the broth.

Then proceeded with the usual process, adding the thigh meat for the last 20 minutes and topping each bowl with an over easy egg, scallions, and some ginger matchsticks.

Very tasty.

It’s the first time I’ve heard of it/made it! I couldn’t find my smoked paprika, so I just used regular Hungarian paprika. I can see it being good on a turkey and Swiss sandwich.

And I couldn’t be arsed to make a true wedge salad (and I don’t like blue cheese dressing) but the chunk of iceberg did OK in a pinch. :grin:

It must be a sign of old age when you manage to somehow mess up your shoulder while asleep to the point that you can barely move it without ridic pain in the middle of the night :scream: I eventually found a comfortable position, only to be awoken by the 14 workers starting their hammering and pounding all over the house at 8am replacing our 20+ year old roof. Good times!

My PIC and I shared a Cubano panini (sic)

from the food truck parked at the brewery where my band played last night. It was much better than the photo would suggest, and the chips were made fresh. We had a huge crowd with many familiar faces & made a nice chonka cash in tips :smiling_face: Our sax/clarinet player had asked if he could crash with us (he lives about 75 min away), so we hung out with him for a bit before falling into bed around midnight. I just can’t seem to get enough sleep these days — it’s hibernatin’ season :bear:

Hosting the first potluck of the year for my local cooking group today. 17 cooks have signed up, including the former owner of an Indian restaurant in town. I’m excited :blush:
