farm eggs seem to have slightly thicker shells.

I noticed that too, when a friend gave me some eggs from her cousin’s farm. I wonder if the thinker shell helps them remain fresh longer.

I friend gave me 6 eggs from her cousin’s farm. I fried 2 and served them atop Ojaxura with Mushrooms leftover from Saturday’s dinner at a Georgian restaurant. Ojaxura is a traditional family dish of sautéed potatoes, mushrooms, onions and garlic, and often includes pork. This was a vegetarian version. I fried the eggs perfectly for me - crispy edges and runny yolks. [IMG_9400]
