Well, I am looking to try making pizza these evenings for some change :thinking:, I have seen ingredients of pizzas at Pizzahut, so I will give it a try

Penne/shrimps/spicy chorizo/mushrooms/caramelized onion/diced fresh tomato/tons of garlic and Calabrian chilis/EVOO and a dusting of Parm/Regg on this freezing cold evening :pinched_fingers: :cold_face:

Lamb mixed grill: loin chop and za’atar lamb sausage from the posh butcher, Greek lemon dill rice (RecipeTin Eats), Greek-ish salad with a bit too much feta.

My PIC had a craving for bean & sausage soup, which basically means Tuscan soup or some version thereof at casa lingua. We picked up a package each of the hot & mild Italian sausages at TJ, tiny little fingerlings, chopped kale, and white beans.

Fried up 2 hot & 2 mild sausages in a separate pan while toasting a bunch of fennel seeds in the soup pot. Added a little olive oil, diced shallot & chopped garlic to sauté, then a blob of nduja and tomato paste to toast. Cooled it all down with a generous splash of vinho verde, followed by a few cups of water & chicken BTB. Taters, sausage & kale went into the pot, beans followed later. We wanted a bit more kick to it, so I added Aleppo pepper & a spoon of aji amarillo. I may never not use aji amarillo in this soup! Finished it with a touch of heavy cream for that extra hug. Perfect, and lotsa leftovers :blush:

NO SALAD TONIGHT! WHO AM I??

We enjoyed another excellent dinner at Jessica’s Cafe in Fanwood, NJ, including grilled octopus with stuffed potato croquette with cheese, roasted fennel, Napoli sun dried tomatoes, saffron sauce; excellent Andouille sausage with porcini mushrooms, cherry wine cream sauce; seafood fettuccini with mussels, shrimp, scallops, white wine lobster sauce, chilies, broccoli rabe, grilled lemon; short ribs with horseradish cream, red wine braised cipollini onions, shiitake mushroom risotto, au jus. It all went great with a couple of excellent cabernets.

Thai Inspired Meatball Soup. I ground chicken thighs for the meatballs and made them smaller, used bird’s eye chiles and served it over leftover cilantro rice with red shishito chiles for color. Delicious. Pickled veg. Heavily oaked chard spritzer.

Dinner tonight was “meh” and against my better judgement:

Mistake #1: Marinated and broiled salmon ala Mark Bittman. In my book, when it comes to salmon, simpler is better. Here I found the marinade didn’t add anything, and the process of broiling - while the center came out moist - left the edges and belly-flap over-cooked. I’ll stick with searing in a hpan, and finish off by roasting in a hot oven.

Mistake #2: I tried re-cooking last night’s leftover potatoes in the convection oven on the air-fryer setting. These came out edible, but nothing I would crave.

You don’t know until you try. We ate it, but no repeats.

I made a trip to the grocery store this afternoon to pick up the remaining groceries on my list. I took the bus there and back partly to stay off my feet but akso because it was bone-chillingly cold. So I started with egg rolls and a cup of oolong tea to thaw myself then cabbage and chicken wing stew. I should be thawed by July.

Spent almost 5 hours today making this multi-step moussaka and a) we ate it in 5 minutes b) it doesn’t look that spectacular! but it was really good. I used two different recipes - Serious Eats and RecipeTin Eats. All beef as I couldn’t find ground lamb nearby. (!!) There are very thinly sliced fried potato and eggplant rounds underneath the stew, and under the bechamel. Basmati rice and tzatziki on the side. I’d slice the potato and eggplant a little thicker next time, but i wanted to make sure the dentally-impaired BF could eat it without a struggle. success!




I only made half the recipe but there’s a ton left for the BF’s dinners while i’m at my sister’s helping out with the holiday dog boarders for the next three days.

Also, this morning i made a new batch of kimchi as i turned the batch i made a few weeks ago into a kimchi bomb after stupidly forgetting to loosen the lid of the jar while it was fermenting outside the fridge. After 2.5 days, the bottom half cracked completely off the jar at like 2:00 a.m. - and since I was blissfully asleep, the BF got to clean up the mess!

This new batch also uses something I’ve never tried before - sweet rice flour, which I read about on Maangchi’s site. I also grated part of an Asian pear into the mix. It is now loosely capped and will go into the fridge tomorrow night or Tues. morning. :crossed_fingers: :crossed_fingers: :crossed_fingers:

Carbonara, with whole-wheat linguine (they didn’t have spaghetti), bacon, chanterelles (cooked earlier today), bay scallops and shrimp sauteed in the bacon fat, grated romano.

If you cook for more people than usual Chili is often a good approach - this one was a rather classic way with ground beef, kidney beans, tomatoes and kidney beans pureed to give a good consistency, onions, chili powder, chipotle with adobo, coriander, garlic powder, cumin and oregano. Served over rice and with avocado, cheddar and sour cream
