BF is away, so I am working through a package of octopus tentacles this week. They are already cooked, so they just need a sear to warm them up. Dinner tonight is seared shrimp and octopus with roasted tomato salsa and avocado, along with some roast broccoli. Corn tortillas out of shot. There were absolutely some tacos happening this evening!

Did some running around for a client today & took care of personal errands. Pretty nutsoid everywhere, like peeps just realized today xmas was coming up :crazy_face:

Was gonna step into Target for the OXO garlic press that’s been sitting in my Amazon basket for days now bc I didn’t just want to order ONE thing, but a quick glance at people’s carts near the register made me do a 180. Hard No.

We had our pesca friend over for dinner, which was takeout from a newly opened fish & chicken fry place that got really good reviews in my local Facebook food group: a 2-piece haddock & fries, and half a fried chicken with fries, corn & a house salad bc HEALTH.

Everything was excellent & the portions more than generous. Fish was juicy with a light batter, the ridic amount of fries crispy, and there was a good amount of tasty tartar sauce & even a small container of malt vinegar. The corn had cilantro in it which I loved but was unexpected for our pesca friend who hates it :grimacing:

The ½ chicken was well-seasoned & also very juicy. A really fab addition to our town, for sure.

Ramping up for the holiday. NY strip steaks. Loaded mashed potatoes with bacon and scallions. Salad greens in vinaigrette.

Lotsa leftovers- a good thing.

I went to town this morning, the Pacific was angry, roaring and thrashing around. Stood in line at the post office for 1/2 an hour, one clerk, one person retrieving packages. :confused: Made it home before the rain arrived. I needed hot soup for dinner. I made Caldo de Camarón, I didn’t plan on it being quite so hot. Runny nose, burning throat and it only had one poblano. I know they are usually not very hot but this one sure was. Pepper jack quesadilla, pickled jalapenos and radish. Sangria.

Eggnog to soothe the throat.

Sausage with Cannellini Beans and Kale - Fresh Italian pork sausages get cooked to build some fond. Deglazed with onions, garlic, red wine, tomato paste and smoked paprika and afterwards you cook lacinato kale, cannellini beans and the sausages with the fond and water. Finished with olive oil and sherry vinegar

Here is a quick translation

Cut up 500g of kale (2-3 bunches), blanch it for 2 minutes, transfer to ice bath and dry it in salad spinner.

Sear 350g linguica (cut in 4-5 larger pieces) in a pan for 4 minutes, add kale and sear for another 3 minutes. Remove from heat and cut linguica in 0.75 inch pieces.

Cook 1 lb of pasta.

Make béchamel sauce with 3 TBL butter, 2 TBL flour, 700ml milk and 200ml vegetable broth by gently cooking it for 10 minutes. Add 100g grated cheddar and 70g gouda and finish sauce with salt, pepper and cayenne pepper.

Mix pasta with mornay sauce in casserole dish and carefully mix in linguica and kale.

Mix 3 TBL panko crumbs and 30g grated gouda and add it on top of the casserole.

Preheat oven to 435F and bake casserole for 10 minutes.

Leftover carbonara. Pictures of leftovers aren’t common in this topic, but these were really good. With shrimp, bay scallops, and chanterelles.

Marcella Hazan’s classic Bolognese. It was really cold this weekend, I found some ground beef in the freezer and I had the whole afternoon at home so this was a no-brainer. Mr Bean requested it served on rigatoni. Served with a “Caesar” salad because I had a bit of dressing and white anchovies to use up.

First meal I took pics of in a few days — Mac & cheese and Cauliflower cheese, the usual bechamel twofer around here.

A nice Christmas Eve dinner (even though a third of the fam was felled by their own terrible ordering at Christmas Eve lunch despite all warnings to the contrary, and therefore went to bed without dinner :roll_eyes:).

Last night’s early Xmas dinner at my sister’s. Lasagna, super garlicy rapini and some roasted potatoes from a local Italian bakery/deli. Tons of other delicious goodies and treats were consumed as well.
Dinner tonight will be salad with some kind of protein, no photos cause y’all know what my salads look like by now. :smiley:
