Finally cooked something but it kind of sucked. A Barefoot Contessa lemon chicken breast recipe. Oily, boring, and the oil splattered and burned all over my new LeC baking dish.

Tonight’s dinner started with dolmades then I moved onto pork and bean stir fry served over rice.

Made a large pot of meat sauce for the freezer and decided to use some for a lasagna.

Shallower than it should have been but I didn’t have enough lasagna noodles. Didn’t have ricotta, so instead of a bechamel, I made a white sauce of an egg, cream cheese, sour cream, grated Parm-Reg and dried parsley.

Side salad of green leaf lettuce, radishes, and tomatoes, with a vinaigrette of olive oil, minced shallots, s/p, Dijon mustard, lemon juice and a bit of honey.

Xtra large meatballs ready for the oven . And another half pan after this one . There is alot of them . Freeze then vacuum seal what is not used tomorrow. Cheers.

Fennel and white bean casserole from the NYT, roasted garlic veal sausage from a local farmer. Gamay.
Good stuff.

Nostalgic and comforting. Goulash, garlic bread and tomato, cucumber, red onion salad with oo&v dressing, basil. There was wine.
It was alright but it was a little bland, I added rpf and smoked paprika which helped a little.

Tonight, I assembled a speedy chicken quesadilla from the last of the roast chicken, flour tortilla from the freezer that I had forgotten about but salvaged just fine, salsa that’s been hanging out in the fridge for longer than I’d like to think about but was surprisingly fine, and grated cheddar.

Last night, out for Sichuan dinner with visiting family after the literary event they were in town for. Wood ear mushroom salad duo, shanghai spring rolls, crab and pork xlb, spicy cumin lamb, garlic shrimp, mapo tofu, rice.

Night before, also a chicken quesadilla, which is apparently what I have in me at the moment. Haven’t been able to sleep all week, and a 5am bedtime is not conducive to creative dinner energy.
