Breakfast has become very mundane. Maybe one or two day a week we vary. But breakfast is 1/2 cup of rolled oats, 1/2 cup of almond milk, a half a walnut broken and fresh blueberries and strawberries. I’ve come to enjoy it.
On weekends I splurge and I make a 3 egg French omelette for 2, with some toast

Shakshuka-adjacent. Egg (slightly over-) poached in some leftover sauce of tomato with long-cooked squid and broccoli.
I bet eel with grits would be pretty damn good.
Where did u get that ? Frozen?

I think eel with just about any type of carb would be pretty good.
Grits, oatmeal, rice, potatoes, cornmeal, bread, and yes, even pancakes (ask me how I know ).
The “everything” omelet at a local resto: three-egg omelet with house-cured salmon, whipped goat cheese & capers, served with a warm salad of new potatoes, local fall greens, pickled red onion, salmon roe, and cucumber dressed in “everything” vinaigrette. 'twas good, if not a lot for two peeps.

Eggnog biscuit and strawberry jam, substituted eggnog for buttermilk , added some gratings of nutmeg. The flavor of the eggnog was very light, scones might be nice with a little rum added.
This week I’m having breakfast sandwiches. I filled toasted rolls with refried beans, scrambled eggs, roast pepper, cabbage slaw, feta and coriander and I dip them in sriracha sauce.
Eggnog dipped French toast with a splash of spirited eggnog in the mix. Apples sautéed in butter, then poached in apple cider. A very filling breakfast!
Breakfast tacos with kielbasa and scrambled eggs with cheddar, tomatoes, scallion, and serrano chiles. Crema and obligatory hot sauce, too!
