What's for breakfast? (2025)

Before my annual (or near annual) trip to soutgern Maine for antiquing, I hit up Vic’s Waffle House in my town. I was this close to getting their Brioche French Toast, but I didnt want to weigh myself down.

So I weighed myself down  with 2 over-easy eggs, sourdough toast, 4 bacons, and seriously good home fries. Cawfee and freshly sqeezed OJ for the libations.

The money shot!

A proper Maine breakfast…although the blueberries came from Mexico and I’m not sure where the maple syrup is from…other than Wegmans. But it was still good!

My sister and BIL buy their Maine maple syrup by the GALLON. :astonished: She offered to get me one and I told her I’d never finish it off before it would go bad.

Yeah, I pass on the huge containers of syrup. I love the good stuff, and I’ll pay more per oz for the smaller containers, because there’s no way I’d finish a vat before it goes bad. Sad but true.

Maple syrup can be frozen for longer storage.

Skinnytaste’s high-protein bagels made with a combo of cottage cheese and yogurt and topped with onion flakes, minced garlic, poppy seeds, sesame seeds, and coarse salt. “Toasted” (in the broiler) and topped with copious amounts of whipped cream cheese. Yum.

Fried egg sandwich with cheddar and bacon. Hot sauce on deck! When I made bacon last week, I wrapped the slices I didn’t use and put them in the freezer, so this came together really quickly.

This morning’s breakfast was scrambled eggs and smoked bacon that I purchased at the farmers market last week.

Poached egg in microwave, tried this out of curiosity as I have no problem doing them stovetop. Well this fooled me and came out perfectly. One cup water is brought to the boil, pinch salt. Gently place egg in water, cook at 80% power. This took exactly one minute cook time. Buttered the toast and removed with a slotted spoon. Serious eats was the source.

Not a combo that would have been on my imagination-radar. Did you like it? What proportions? Fresh or canned pineapple?
