It’s an interesting combination but I found the recipe while I was poking around on the skinnytaste website and it tastes like summer on a plate. It’s not as filling as a protein smoothie though so I make sure to have a mid morning snack that would fill me up like dates. I used fresh pineapple though I don’t see why you couldn’t use canned pineapple if you have it.
Breakfast burritos with eggs and potatoes to use up stuff from the fridge - leftover salsa from earlier this week, about half a cup of rice, bits and bobs from the charcuterie and cheeses.
A lovely cuppa my PIC made with our room’s espresso machine. I don’t think he even tried for that cute pattern: il fiore di caffè
And my second breakfast, this time with a falling star.
On second glance, it looks like a lizard flipping the bird.
This morning it was bacon, (duck) egg, and cheese on a homemade English muffin (Bravetart).
Welcome brunch for my bestie: sourdough,
perfect SBEs,
grilled veg & Sicilian tomatoes with olive oil, s&p & oregano,
hot-smoked fish (halibut, spiny dogfish, salmon) with horseradish,
salumi plate: Italian pistachio mortadella & fennel salami, German teawurst,
cheese plate: Taleggio, Raschera, Bergamino di Capra,
figs drizzled with local honey.
Wow - that’s an impressive spread!
I only see her once a year. Gotta go all out for my girl
A 6-egg, 12-inch California omelette (my biggest ever 'cuz we was hungry). Tomato, avocado, bacon, cream cheese, chives, cheddar, scallion. Chimichurri optional.
Those look amazing!
Well, my bestie departed very early this AM
So we cheered ourselves up by having a breakfast of leftovers, no less lavish than during her visit
Plain Greek yogurt with lime zest and fresh diced strawberries. It was supposed to be Katie Lee Biegel’s strawberry kiwi quinoa parfait but I didn’t have time to cook the quinoa so I just improvised. Very tasty.
