I don’t even have a photo. It was that bad.
I had never eaten an Eggo in my life. Ever. For some strange reason, I decided to remedy that situation. So last week I availed myself of a box of frozen mini-frisbees.
Yesterday was try out day. DEAR GOD they were awful.
And I had really good French butter and really good maple syrup to waste on them. I should have just buttered a paper plate, poured syrup on it, and licked up the contents like my cats.
And no, I’m not going to buy a waffle iron. No room, no need. I can go out for waffles. Which I should have done.

Now I’m craving egg foo young. I haven’t ordered it in decades.
Yeah, I have a waffle iron/pressed sandwich maker…and I use the pressed sandwich maker side more often. I’d rather head up to my local waffle house in my town and get their waffles. Besides, I can then get strawberries, whipped cream, bananas or whatever they offer, along with the good maple syrup. And let’s not forget the bacon and sausage. They can cook it all faster than I can at home.

I love egg foo yong, and make it home regularly. That dish, and a pseudo jian bing (gift link), are my breakfast go-to’s for leftover bits of stir-fry.

Today’s frittata was leftovers from Monday’s dinner: halibut in cream sauce with rice and veg. Hali was flaked, rice left whole, yellow summer squash and cream-coated leeks chopped into tiny bits. I added a bit of fresh tarragon from the garden so as not to be totally redundant.
Scrambled eggs with leeks, bacon, chives, and gruyere. Gougeres (pre-baked and re-crisped from frozen). Gazpacho.

The tomatoes can be raw or roasted.
The bacon can be whichever type you have on hand.
