What’s for Dinner #25 - 09/2017 - the Autumnal Edition

I bet that Duke’s Mayonnaise you bought is worth every penny. Good-looking BLT.:cowboy_hat_face:

I have come down with something nasty. Flu-like symptoms. Some fever. Exhaustion. Coughing. Been hard to force myself to eat, much less find the energy to cook. Last night was a crustless quiche. It was so salty I could not eat it, yet Mr. SMT who is salt-averse loved it. Tonight, I made some chicken stock from the grilled chicken carcass and then made a chicken-Greek noodle soup. Hope to be full strength again tomorrow.

Mr. SMT must have been hungry.

Amberjack with a side of roasted cauliflower.

Working my butt off making stock from chicken carcasses and corn stock from cobs occupying too much space in the inside refrigerator freezer, knowing we will lose power for extended periods of time in the next few days as Irma bears down on us. I don’t want to have to open my outside freezers in case of an extended outage. Generators were in short supply as this storm decided to switch coasts

DH had to have emergency oral surgery today (ugh! but it all went well) - so I made him some mashed potatoes for dinner, with ice cream for dessert. Luckily those are two of his favorite things and he rarely gets to eat them, so they were truly comforting.

For myself, a snacky dinner of some odds and ends of cheese, crudites with a tangy mayo-mustard dip and a couple of grilled sausages. And some ice cream, because I had the scoop out!

I can’t believe you fussed with making soup while feeling so sick- but chicken noodle is supposed to cure all so hopefully it can work some magic for you! Feel better soon

Dinner was Cojo salmon (on sale @ WF this week) with a cider glaze, tarragon basmati rice, steamed broccol and wine.

Dessert was fresh figs with goat cheese and peppered honey, a recipe from Epicurious. SO good!

I miss Jersey corn and tomatoes. Everything looks wonderful!

As some of may recall, I really have one job. Keep on the weight. Imagine my shock when I got on the scale after three days of “flu-like symptoms” and I had lost 5 pounds.

Clearly, I needed a calorie dense dinner. Made Potatoes Dauphinoise based on Dorie’s Greenspan’s version, except I subbed the Guyere with some sharp Vermont cheddar. Today’s Farmer’s Market had some nice, and affordable onions, so I sautéed some with thyme and cooked up some mediocre, store bought sausage.

After dinner, I made a few Oatmeal Raisin cookies with the dough that had been chilling for quite a few hours. I use Joanna Chang’s recipe from Flour, with reduced sugar. Pretty tasty.

They came ,had the same food , more crabs ( 30 of them today, ) some fresh newly harvested raw oysters ( had 7 left over from Monday’s party even after we gave some away, but waiting to recycle the left over ones from monday by throwing back into our oyster bed as required by law in Maryland to help regenerate the next generation of oysters. ), guacamole ,with chips, spring rolls ( did not intend to serve this was request) ,a couple steaks shared with the guest and my baby poms and hot dogs as appetizer while crabs were cooking) , dessert was provided by guest. Tiramisu, various mini french pastries. Of course wine. on

The best feature today is watching the videos taken by the drone on Monday. . Looks Great! Wish I can post it but I guess they had to be edited as the drone was up there around 6 hours ,being brought back every 2 hours to change battery . It also took some pictures of the fireworks! My son edited it last night but says he will edit it further. I think he was bale to take some pictures from it.
