Hi everyone
Still cooking for 3 to 4, including one recuperating, vegetarian senior.
Actuals still varied quite a bit from plan based on interest / appetite:
- Pizza using Roberta’s dough recipe (but only AP) and the pan-fried technique
- Quesadillas with leftover roast chicken, cabbage and carrot slaw dressed with chipotle mayo, and pico, plus a side of Mexi-rice
- Yakisoba-ish, Taco bell delivery (yep), plus homemade chapati quesadillas for mom stuffed with potato, paneer, and a bit of melty cheese, with a side of guac
- Braised (leftover) Chinese-style ribs, crispy garlic fried rice, stir-fried cauliflower, and a tiny serving of stir-fried matchstick potatoes for mom
- Umami noodles and Sichuan cumin chicken
- Ragda patties – street food at home: stewed white peas with mashed potato patties and various toppings
Ideas for this week:
- Sushi bowls (spicy shrimp, asparagus, mushrooms, avocado, furikake)
- Bulgogi bowls (beef, garlic spinach, sesame carrots, gochujang)
- Thai green curry (chicken for us, mixed veg & paneer for mom)
- Crepes (florentine for mom, chicken & mushrooms for us)
- Oyako Donburi
- Spanish tortilla, chorizo, alioli (pasta for mom)
- Steak, potatoes (mashed or scalloped), tbd veg (spinach? asparagus? mushrooms?)
Ongoing wishlist
- Ants climbing a tree
- Yebeg alicha (Ethiopia cookbook) with improvised injera crepes
- Lamb ribs (either Dad-style or Sichuan cumin-crusted)
- Japanese Salmon & Mushroom Clay Pot Rice
- Enchiladas verdes (riffing on this with tomatillo salsa)
- NYT gochujang butter noodles with tbd protein and veg on the side
- Kashmiri koftas / aka Keema or Mutsch
