Uses for a lot of canned tuna?

I have a Tin Fish Gourmet cookbook that has a tuna potato casserole, a tuna noodle casserole, and a tuna rice casserole recipe.

I have heard of it but never tried it. Time to remedy two shortcomings in my culinary experience when I get home.

if you see an Insalata Nizzarda in Rome, you can try it there

CLASSIC Spanish Potato Salad | The Famous Ensaladilla Rusa Recipe

Spanish take on Salade Olivier with canned tuna - I made a note about this about a year ago but have never gotten around to looking up recipes until now and have not made it. Didn’t see it mentioned anywhere above. There are many recipes online. I have encountered Rusa salads in Latin American cuisines I’ve sampled here in Houston but all just potato salads with various veggies and no meat or fish

A small quick and simple tuna casserole tonight:

I started with a roux made with 2 tbsp butter and 2 tbsp flour.

White sauce made with the roux, 1 1/2 cups milk, 1 chopped scallion, 2 shakes of worcestershire.

1 1/2 cups small pasta shells.

2 ounces grated old cheddar.

Combine cooked pasta with white sauce, top with cheddar, bake at 350 for 20 minutes, broil at 405⁰F for 2 minutes or until starting to brown.

How many cans of tuna did you put in the casserole?

1 standard can (drained- this was tuna in water. 120 grams drained, 170 grams including water) to 1 1/2 cups / 375 ml pasta to 1 1/2 cups milk / 375 ml milk : 2 tbsp/ 30 ml roux : 2 ounces /60 g cheese

This is sort of the right size for 2 or 3 people for a light main. I have been making smaller portions lately.

This is interesting to me because he doesn’t combine the tuna and mayonnaise but rather keeps them separate. No anchovies for me however.
