For breakfast today I made cilbir, Turkish poached eggs with yogurt, following this recipe from Chef John:
Wow! Thatâs a work of art!! Were you happy with the taste? What is smoky butter? (Not something I would be able to enjoy).
Yeah it came out well I thought, and quite easy. The butter has Aleppo pepper, cumin, and paprika. I think I overcooked it a bit but it was fine. It was a little smoky because I used smoked paprika.
I had this dish in Turkey this spring (Kas). It was the only dish I had in 2 weeks that I really didnt care for. Maybe eating it with a larger quantity of bread would have helped
I made the muçver â they were excellent! Used my own blend of cheese (hard salty sheepâs milk + parm) bc no feta.
Iâve been using Parm or gruyĂšre in spanakopita lately, when I donât have feta, and it works!
Winter squash can be used in this chicken and vegetable one pot meal.
Now that zucchini season has ended in zone 5, I decided to look up carrot fritters
Look who stumbled into a real dish while being lazy â turns out this is an Anatolian variation of Gozleme.
cooked Turkish tonight Izmir Kofte from Vidar Bergumâs blog
Simple recipe, cut up winter vegetables - potatoes carrots and maybe some pepper layered in a baking dish, then meatballs seasoned with a bit of onion, cumin, red pepper (I used aleppo) and parsley and bound with an egg and bread crumbs are layered on top and a sauce of tomatoes, tomato paste olive oil and water is poured over. the whole thing is baked until all done. As comments reported, the meatballs are done first, so I took them off, covered the baking dish and microwaved the veg for about 10 min. This was a classic mainstream flavored satisfying winter dish. Very nice.
Lamb köfte burger with Penzeyâs Turkish seasoning & a yogurt sauce with feta, garlic, Aleppo pepper, s&p and scallions.
Pretty tasty for winging it.
Savoury spinach cake
Sweet spinach cake
Taze Fasulye / Stewed Green Beans
Never not delicious, and yet I keep forgetting to make this on repeat, and in large quantity!
This time with fresh green beans and fresh kumato tomatoes that were a lot sweeter than any canned ones.
