Things to make with Boiled Eggs

A discussion of how to use leftover boiled eggs from Easter led here.

@Amandarama recommended chapli kabab with grated boiled eggs.

@Aubergine recommended Zabar’s recipe for egg salad.

I suggested assorted egg curries (some examples from Maunika Gowardhan, or a simple onion-tomato-aromatics masala base – add spices, curry powder, garam masala, coconut milk if you like, or not).

A bit more work: Nargisi kofta aka kabab-wrapped boiled eggs or spiced Scotch eggs (in a sauce, or just fried or baked as is).

Deviled eggs are an obvious and delicious solution, if you like them.

The simplest salad I’ve been making lately is baby arugula, a drained tin of tuna in olive oil, a hard boiled egg, dressed with olive oil, pepper, white balsamic and lemon juice

I might try this recipe tomorrow morning, with the smoked salmon I have leftover.

This one calls for grated apple and grated radish

My mother always made us creamed eggs on toast to use up Easter eggs - HBE chopped up into bechamel sauce (with a hint of nutmeg and a ton of black pepper), poured over torn-up slices of buttered toast. Still one of my favorite breakfasts.

Ironically, I have no eggs in the house at all right now. Like, for the first time in years. Will need to go grocery shopping at some point!

I haven’t made Eggs in Mustard Sauce. They’re on my try some time list.

I seem to be outgrowing my mustard aversion. Lol.

Haha – I couldn’t find eggs that weren’t exorbitantly priced until the morning of Easter when I went to buy flowers, and there was a full case :joy: So I bought myself a dozen along with the flowers for the hostess and took them with me to lunch :rofl:

Why mess with a good thing.

Just eat them as-is.

Boiled eggs are nature’s multivitamin.

Same reason we do things to other proteins and vegetables rather than eat them all as is.

I’ve only eaten Sauce Gribiche over asparagus, but I guess it goes with many things, including fish.

Lebovitz used boiled eggs in his chicken liver pate which is a MIchael Ruhlman recipe, and probably a nod to chopped liver.

A local Indian buffet sometimes had a very good dish of hard boiled eggs in something like a vindaloo. It was too easy to stuff yourself on multiple eggs (as you can do with deviled eggs). The owner retired, sadly.

Egg curry is a very popular and cheap dish across India — considered non-vegetarian, but eggs are a tiny fraction of the cost of meat. I love potatoes in egg curry (well, in any curry, but they go especially well with egg).
