Wife and Daughter are at a picture show. So it’s just me and my nachos. (With steak, pinto beans, queso blanco and shredded cheese, diced onions and tomatoes, homemade guac, and pickled serranos)
Did you save any for them?
Wife won’t partake. Daughter will have the option, though I think she may make tacos with the leftover fillings instead. (When I mentioned that I was planning to make nachos, I recall my Daughter saying something like “Oh, what a waste”)
That’s great, but I don’t see that it’s some chef’s secret guac weapon. Slow day at the food desk?
I grilled wings using a recipe that called for sprinkling them with a tiny bit of cornstarch in addition to some seasonings. After grilling, I gave mom hers with some bbq sauce on the side. I tossed mine with Frank’s and butter. Delicious!
H is getting over a maybe cold maybe still COVID, so we had to cancel our get-together. Gotta eat, though! Even if it’s just us two.

San Francisco cioppino, warm sourdough baguette, roasted garlic, parsley butter. The was a red snapper and wine with. Probably a lot more to drown my sorrows.

I wonder if in China they have sports teams wear red white and blue if their championship game is near our New Year time.
I marinated some skirt steak in olive oil, cider vinegar, seasoned rice vinegar for a little sweetness, light soy sauce, Worcestershire, garlic powder, cumin, and New Mexico chili powder. I grill it MR over charcoal and cut it into cubes. The nacho base was Julio’s seasoned chips. They were each topped with refried black beans, grated Oaxacan cheese, a drizzle of crema agria, Herdez salsa casera, a blob of guacamole, and a chunk of steak. Heated about five minutes at 425 F. Washed down with cold Michelob Ultra Gold. So messy. So good.
My father and his family were from San Francisco and my generation of them still live in the area. So a 49er’s victory would have been fine. We live in Texas and enjoy Mahomes. So a Chiefs’ victory would be nice. Mainly we love good football, and this was a good game. Some of the ads were good. We especially liked the Eagles and Seahawks ad. Despite generally liking Taylor, her presence at the game with constant cuts to her booth gets tiresome. I doubt it helps the team to have the distraction. It took them three quarters to focus. I thought Butker was the real MVP. But for his amazing kicking, there would have been no OT or joy in KC.

We ended up finishing that entire bowl of guac between the two of us . Not my idea of a proper dinner, but neither is watching spandex-clad clowns play hand-egg.
I also don’t remember feeling as old as I did watching that halftime show , but at least the commercials were on point this year.

I usually just watch for the commercials, but this year also enjoyed the game with commentator volume at minimum. My husband, who at the start had said he wouldn’t delay his usual bedtime for end of game, stayed up late (for him) to watch the OT.
Top commercials for me, which don’t match up with any published lists I found -1) Kawasaki “mullet” 2) the Clydesdales 3) Arnold S neighbaaa 4) Toyota Grab the Handle. Can you tell I like the humorous ones?
It’s a tough six weeks but I’m getting good results, changing some bad habits, and the end-of-challenge party, which is on friday, will be awesome, with tons of amazing food and drinks.
I went with lemon-pepper wings, Chef Eric Ripert’s baby potato salad (with added bacon) and a broccoli-cashew salad (with MORE bacon!) I had planned on making dessert, but I didn’t. So some Aldi’s Winternacht Spekulatius Cookies to the rescue. Only have about 10-12 more.
And I really wanted San Francisco to win. Oh well. I DID win both the Half and 3rd quarter in my office football pool, to the tune of $180, so I’m good with that.

I just found it odd that someone would write an article about such a basic guac prep and suggest it’s somehow better than the same thing that most people do sleepwalking.
In this vein, I suckered into making Serious Eats’ “Ultimate Onion Dip” for the Superbowl. It was the worst dip I can remember tasting, and possibly the worst (foodstuff) I’ve put in my mouth since infancy.
The prep had tricks, allegedly to make it faster. Like melting some sugar to carmelize the onions faster and adding a pinch of baking soda, and browning and deglazing the onions multiple times. I was even instructed to just use “regular” yellow onions. It was just terrible–like in the bad old days when “authors” like Martha Stewart would pump out books of untested recipes.
So, simple guac is good.
