I make scallion muchim / salad as a lazy version, or when I didnât think to ferment.
VINEGARED SCALLIONS
This is one of my favorite banchan at k-bbq: a big bowl of scallion salad! In fact, one of my only single-use tool purchases has been a scallion shredder, which I bought specifically for this dish
Dressing is very simple: rice vinegar, gochugaru, pinch of sugar (he uses dark brown but I prefer white for this), salt, and pepper (which I skipped).
The scallions are better if soaked in cold water first, then drained and held till youâre ready to serve. if you dress tâŚ

More of the Viet cabbage slaw was also eaten, bec even a whole bunch of scallions isnât all that much!

Oooh, that looks good. The scallions I grow at home tend to be much thinner, so I wonder if I can get away with not julienning them. I only harvested about a 3rd for the kimchi, and still have quite a bit I can harvest before they really start to go. This sounds like a great option!

Thatâs a good idea. I also donât harvest the bulb end, so that they can continue growing and Iâll get another harvest later in the season.
