Since we’re in that time right now, I decided to try Pa Kimchi (Scallion kimchi)

Fermenting on my counter right now. Hopefully it comes out well.

I make scallion muchim / salad as a lazy version, or when I didn’t think to ferment.

Oooh, that looks good. The scallions I grow at home tend to be much thinner, so I wonder if I can get away with not julienning them. I only harvested about a 3rd for the kimchi, and still have quite a bit I can harvest before they really start to go. This sounds like a great option!

So good, and so easy! Maybe a diagonal cut on the scallions would be easier?

That’s a good idea. I also don’t harvest the bulb end, so that they can continue growing and I’ll get another harvest later in the season.

Another shout out for Trini green seasoning ! I used up half of of the overwintered green onions.
