My DD just did salmon Bo Ssam style, ginger scallion sauce then Cole slaw , served in a lettuce leaf.

What a fabulous idea!! But how did he sub all that luscious crispy pork skin? Did he fry up the salmon skin? 
Looks like she baked or grilled it.
