Looking for a place to have lunch in Bologna. Something along the lines of Hosteria Giusti (Modena) vibes would be perfect. And open on Mondays!

We are planning a two week trip to Bologna in Spring of 2024. I wnt through the recent posts on Bologna and there are not very many of them. we have not been to that city in over 20 years. If anyone has been there recently and has any suggestions, I would appreciate them.
My son is finishing his last term of law school in Paris. I am going to visit him and we will take a short trip to Bologna at the end of my visit so he and I can enjoy being Italian citizens in Italy (we got our Italian passports last January). One of the most well known restaurants serving cuisine from Emilia-Romagna is Trattoria da Amerigo https://amerigo1934.com/ about 40km outside of Bologna. The drive to it is already great through small streets in the hills around Bologna. The restaurant is celebrating 90 years and has a Michelin star for more than 30 years. This restaurant is on just about every list about Bologna and, in my humble opinion, it lived up to the hype. We shared a platter of prosciutto, mortadella and salami.
The plate for two went unfinished by the four of us. I think it was the best prosciutto I’ve ever tasted, so sweet and porky. None of us loved the salami though. Then we decided on four pasta dishes. I have studied those posts. Not too many options that are open on Monday for Lunch.
Oh, that’s a bummer. I’d hoped you’d find something that fits your requirements in at least one of them
Hopefully, some of the previous visitors to Bologna will chime in!
For informal, but relaxing, lunch you could also go to Salumeria Simoni in the city center and also look around the area which has a few shops close by which offer very nice pasta, salumi etc. You just order at the counter, find as seat and enjoy a nice lunch with beer/wine and just sit outside and see life happening around you.

Maybe not even a full blown restaurant but perhaps Enoteca with charcuterie and cheese options and good seating for 5 people?

We had lunch at NOI in the Mercato delle Erbe a month ago. Everything was excellent. So much so that I brought home lardo to make pesto modenese.
