I’m in a major rut - perhaps “loop” is more apt - when it comes to baking quick breads. At this point I’m alternating between this pumpkin bread (courtesy of @Rooster) and this zucchini bread. Nigella's No-Knead Black Bread

Hi all! I am interested in making Nigella Lawson’s No-Knead Black Bread. However, it calls for activated charcoal (1 tsp.). It is optional, but I don’t even know where I would source that. A cursory examination of the King Arthur site didn’t turn up a product that would match. Does anyone know where I could find some that could be used for baking? Do I just buy the capsules available and crack those open? TIA

Bread (dough) & Butter (fat)

While I don’t bake a lot of bread, I was always taught to add butter (or other fats) late in the game… after the dough has come together and rested a bit for gluten development. The reason for this is that supposedly fat actually impairs gluten development. But I see so many online methods for baking bread that adds softened (or even melted) butter into the initial wet ingredients. Is there a reason for this? Was I taught wrong about when to add it? Or are some of these folks just a little bit …

Does anyone here make “seed bread”, eg. grain-free nuts and seeds bound with mucilaginous chia and flax and sometimes egg or oats? See examples below. Yesterday, because I’m always the last one to try new things, I made the viral recipe from Alexandra’s Kitchen for her mother’s Best No-Knead Peasant Bread. Sturdy white sandwich bread recipe

I’m trying to bake a nice loaf of white sandwich bread. My criteria is a single loaf, use a stand mixer to knead it. I’m currently using a King Arthur recipe, which called for all AP flour. It was fine the first day, but on the following days, it simply disintigrated. It has butter and milk in it. I suspect the milk is making it very tender and fragile.
