The Parsi burgers from My Bombay Kitchen are great with chicken. I usually have them sans bun, with raita.
I bet that would make a tasty meatloaf with a chutney glaze

That’s been in my recipe box forever!! If we weren’t so ground-meated out after last week’s mapo tofu, lamb pasta, and pad pra pao I would make that this week. Maybe next week
For your laab, do a big batch of rice powder so you have it on hand.
I’ve only made small batches as per recipe, and do it with a mortar & pestle, which requires some serious elbow grease. Do you use an electric grinder?

Yes, I use my coffee grinder.
Assuming it doesn’t leave as much residue as, say… dried shrooms, yes?
I have an earlier version of this KitchenAid grinder that I basically only use for spices, etc. and I love that its stainless cup and blade a) holds a decent amount and b) goes in the dishwasher.
But as for grinding rice, it does produce residue, which you can wipe out, but it’s very neutral. (That’s why grinding rice is recommended as a way to clean coffee grinders of other residue/odors).
There’s a chicken meatballs Marsala recipe in one of the smitten kitchen cookbooks that I really like.
