Especially over pizza!
Eggs and pizza are a combo made in heaven..
Very few things don’t go well with pizza.
I’m having trouble figuring anything that doesn’t go well with pizza.
I’m about 19 minutes away from turning two dough balls into pies. I’ll have to post the results (good or just indifferent) to the “pizza” or “dinner” thread.
Wife asked for simplest as possible, so I’m only doing sauteed/goldened mushroom quarters and pepperoni this time (i.e., no artichoke hearts, no sun-dried toms, no Italian sausage bits, no Genoa salami, no caramelized onions, no black and green olives, no anchovies… sigh. I’ll be missing all of those).
But the cheese will be a mix of hard whole-milk mozz, Monterrey Jack, and fresh mozz torn bits, plus a sprinkling of parm and romano.
Go big or stay home, pizza!
Chili and cheddar jalapeno cornbread.
Mortadella, homemade ricotta, pistachio pesto on a roll made in casa. Roll had finely minced oil cured black olives and Castelvetrano olives in the dough.
Cherry pistachio pastry for later.

A favorite sammich combo, although I prefer stracciatella or burrata to ricotta.
I had some roast chicken and passionfruit mousse for lunch.

Hot rosemary ham and Havarti cheese sandwich. The roll was sprinkled with Jordanian seasonings prior to baking.
Enticed by a video to try this Allrecipes Meatball Sub Casserole, making a half recipe in an 8x8 pan. Flavorful, but I missed the crunch of the more typical bread/roll of the sandwich version. I used half the loaf of frozen buttered garlic bread (new to me - I’ve always buttered/seasoned plain baguette/French bread) for the casserole, and in a few weeks will make sandwiches with the other half.
