Today’s lunch was an experiment for the ladies. I saw a youtube video where the presenter wrapped some flattened chicken breast around a hunk of cheese. I decided that creation needed breading, so I coated it in flour, egg and bread crumbs (before topping with more cheese & baking it off).
The one pictured is for Neighbor #2, Sunshine ate hers before I could snap a picture, as she was quite hungry. Sunshine loved the “cheese surprise” in the middle and is now… content and happy.
Hot honey sheet pan chicken - reheated the leftovers from Thursday dinner. I made with blsl thighs, having just stocked up on a “six pack” from Costco. Knowing we’re spice wimps I used only 1 T of Cholula hot sauce, and that was enough for zing without burn. Steamed broccoli and bag salad on the side.
Tarragon chicken salad sandwich with quartered green grapes and chopped walnuts on Trader Joe’s soft Sourdough Porridge Bread. (Not sourdoughy enough for me, but still good sandwich bread.)
Sausage, peppers, eggs that were overly generous for the roll, but I managed to eat it.
Dessert was at LaMerenda time this afternoon. A version of Crema Catalan flavored with lemon peel, cinnamon stick and a few anise seeds. Milk was heated with aromatics and let steep, then strained.
Then the chicken salad down the middle - diced grapes and apples are mandatory in chicken salad, according to my wife. Finished with some crumbled paneer that I made last night because we had a half gallon of milk going off a couple of days early.
