Roasted chicken broth seasoned with cumin and New Mexico chile powder, cubed chargrilled chicken thighs, and cubed avocado, topped with tricolor tortilla strips, chopped cilantro, crumbled cotija, and a squeeze of lime.
Todayâs lunch was fried chicken and mac 'n cheese from the grocery store. It actually tasted pretty good!

I made some homemade tortillas, but they came out a little âwonkyâ. No worries, they still made nice cheese quesadillas for the ladies for lunch (paired with some tomato soup).

KAB Recipe of the year 2026 puff pizza dough. A laminated pizza dough that results in a thin , crisp crust. I think this would be lovely for a quiche, but I personally prefer a traditional pizza dough. This was made with 3 cheeses, ricotta, mozzarella and Parmesan, hot pepper flakes, Italian seasoning and evoo.
