This thread has lots of interesting variations (linking my favorite tweak):
Poached chicken breast on pita, endive, pickled onions, Toum spread on bread.
Pumpkin, rum raisins, maple glazed walnuts.
My CS has chopped fresh celery and chives. I like a little crunch and fresh green in there. Minimal fiber. I know some who add grapes. Not for me, but to each, their own. Shrimp salad gets chives and dill. Simple and delicious to me.

That does sound delish! I like to use crème fraîche in lieu of mayo for shrimp salad, and always want something kronchy for texture ![]()
Not a fan of fruity chicken salads, either.
I’m not into canned food at all, unless it is for beans that I haven’t planned on soaking or mandarin oranges ( because I can recycle the can vs. the plastic container. I think you get much better nutrition from fresh.

I dunno, I guess I was expecting something canned added to that cs. I misread—I thought it was canned chicken. Mea culpa.
I don’t think I’ve ever had canned chicken in my entire life, although it would probably work just fine in chicken salad.

Pumpkin pastry cream, still tweaking it.
I have, because my mom would buy it occasionally. It was canned fowl - old, stringy, and the flavor was like that of the chicken one tastes in canned soup products (not sure how else to describe it as I’ve never cooked fowl from fresh). Strong and dark meat adjacent, but with none of the lushness of dark meat in younger birds.
It looked light and luscious!
