Some good news to share, yesterday Neighbor #2 asked me to bring her something she could re-heat for lunches. She is ready to attempt two meals a day vs. one (which is very good news). I went through all of my frozen leftovers and she picked the Potato, Onion & Carrot casserole. I had two large pieces. I figure she can cut them into lunch sized portions and heat it up when she gets hungry (during the day).
I make this dish a lot, as potatoes go on sale quite frequently. I’m really happy that the leftovers are being enjoyed.

They are very easy to make - I freeze the marinade after making them and reuse it a few times.
Moussaka, with spinach/rice/lemon/cinnamon spanakorizo on the side. Using a moussaka recipe posted years ago on CH by Querencia, a half version today baked in 8x8 pan.
The other half pound of ground beef/onion mixture got baked into an 8x8 half-recipe of sheetpan loaded quesadilla. That will alternate with the moussaka for lunches/dinners the rest of the week.
Porchetta with salsa verde, rice salad , tomatoes vinaigrette.
Sponge cake, raspberry compote, coconut.
Nap time.

I had a medical appointment in the opposite corner of Berkeley from where I live. I schedule them around lunch, so I can get a chili cheeseburger, flame-grilled medium rare, at Smokehouse, a venerable Bears institution. Ugly and fork-and-knife messy, so good.
