Moar pepper!!!
Another round of areyes, this time slightly more conventional in that I used meat. The meat was a 3 meat blend, so I cooked it more than lamb. For the one pita, I used 120g of meat which was plenty for me. As per some suggestions from @Saregama , I seasoned the meat with cumin, za atar, pepper flakes, garlic, scallions, etc. in addition, added a little tomato confit sauce as well.
Pickled radishes added a nice acidic element and the flavor bomb tomatoes were a delicious accompaniment. The confit tomato sauce with cilantro was a nice stand in for the more usual yogurt sauce. Definitely a repeat, probably with a variation as I just sprinkled away when I was mixing the meat.
Looks fabulous! Mixture also sounds like lahmacun / lahambajeen (which uses red pepper paste or tomato paste), which is one my favorite things, but I never thought to use pita (or a flour tortilla) - duh and thanks!
Love these, need to make a batch soon.
It was rather “ random” seasoning! Different from lamh bi ajeen, of which I used to make frequently, this just had a spoonful mixed in to help keep the meat moist, which it did. Thanks for your seasoning suggestions!
Gretchen’s, I had very thinly sliced fennel in there also, yum!
Lu rou fan from the freezer, with added shiitake mushrooms, broccolini, and a soft boiled egg, and also a smashed cucumber.
It ain’t pretty… but it’s pretty delish. Leftover youvetsi: one of few leftover meals I look forward to
Sorry y’all can’t smell or taste this.
I finally zoomed in on your new avatar! Love it! But I also hope the snow is a thing of the past very soon
Oh I sure hope so. We got a dumping of snow a couple of weeks ago then it started snowing yesterday and is still snowing right as we speak. It’s only flurries and we will probably only get a couple of inches but I’m done with winter It’s supposed to warm up by next weekend and I hope the weatherman is right.
Fish and chips, from a new place in our local food court (Emeryville Public Market, Emeryville, CA). The fish was perfectly crisp, the chips less so. I think I’ll try to get the fish alone next time, and get better fries from Super Duper Burger, also in the food court.
The fish looks perfect!
The fries are semi-sad.
Exactly.
Maybe asked them to be double-fried, or left in the fryer for 60 seconds longer?
It’s worth a try.
Or from Paradita, which makes great fries if you like them soft and fluffy but crisp on the outside.
