What's for lunch? (2025)

Thank you! Why the egg salad was wonderful as a matter of fact, chopped with the handy dandy gadget :joy:. The second gadget I used was a microwave egg cooker intended for a “fried” egg. When I only want one or two eggs , I nuke them , under a minute at a lower power, and pop them out onto the cutting board, and give them a chop.

Next time I’m skipping the amaretti cookie but keeping the 43, the brandied fruit/nuts were a good addition.

Grilled cheese on the menu today, Muenster cheese with caramelized onions, arugula salad with pickled fennel and radishes. Dessert was peach sorbet with a raspberry coulis.

Chicken soup today, thinly shaved carrots, basil oil, a little Parm, homemade chicken broth.

Mocha crème patisserie, savoiardi, pistachio and chopped chocolate topping, version #2.

Pork laab with sticky rice, which I steamed in a strainer instead of the rice cooker after an overnight soak. The rice came out better this way than in my rice cooker, which doesn’t have a dedicated sticky rice setting.

Sweet potato kale salad with a garnish of sunflower seeds. Sparkling mineral water instead of milk because I’m outta milk. I will run out and buy some this afternoon even though it’s snowing again :rage::rage::rage:

Salmon arayas, this was quite good! I had made some salmon burger mix and had a bit leftover to use. I cooked until the center was 118/120*, this only took a couple minutes on each side. I put a pot lid on top of the pita for a little weight. Would do again and there is no fish odor at all.

Dessert was an egg tart that I ran under the broiler to improve its appearance.
The appearance was improved but unfortunately not the taste. One and done from Lidl.
