I’ve been watching tons of FB Reels/Tiktok videos about Korean dishes and also this one young woman’s vids about vegan dishes in general. Intrigued by Dubu Jorim - braised tofu - I looked at a few recipes and had the BF make it for us. Most recipes slice the tofu in blocks, but the vegan chick tears firm tofu into chunks so they get nice and craggy. they get tossed in corn starch and sauteed until crispy, then braised in a gochugaru/soy/ginger/brown sugar/mirin/sesame oil and minced garlic sauce. I had him add some of the liquid from my homemade kimchi too, and served the braised tofu over rice with some of the kimchi, green onions, cilantro, and sesame seeds.
really delicious- sweet, spicy, salty, and the texture was somewhat akin to tender chicken thigh chunks. BF added an egg omelet to his as just tofu wouldn’t cut it for him (i had a sliver in my bowl too). This is definitely going into the rotation, maybe with noodles next time.
