I try to always buy Bell and Evans since I’ve never encountered any woody breast or white striping. If the store is out of them, I’ll go for the supermarket’s own organic chicken which is much cheaper. I never buy Tyson or Purdue anymore after too many issues years ago. I’m only picky when it comes to breasts, not thighs which I buy frequently.
No marinade or brine when breading/frying. Flour with salt and pepper, egg, then a 75/25 mix of Italian breadcrumbs to Panko, and I also add additional garlic powder, dried parsley, paprika (I just love the tint-- the flavor is not noticeable), and if I have Pecorino Romano on hand, I’ll add more than a healthy amount of that. Fried in canola oil.
That’s my standard cutlet, but will alter if doing a non-Italian sandwich or meal.
A few years ago, I was on the checkout line at our local Key Foods, along with a bunch of women about my age. The theme from Dawson’s Creek played over the sound system, a song I wasn’t aware I even knew the words to, but suddenly, as one voice, the whole checkout line sang “I don’t wanna wait! For our LIVES to be over…” Which is kind of funny to sing while you’re on line for something.

We really like adding dried sour cherries. There’s an epicurious recipe with red grapes and candied pecans that I like. I can’t link right now due to the paywall.
