Greg, you’re an afficionado of chicken breasts/cutlets. What brand do you typically buy, and do you just cook them as is, or do you do any pre-prep first? Marinade, buttermilk, salt brine?
crispy skin salmon “a la plancha” AKA the flat side of my GrillGrates, grilled zucchini and red onions, Mom’s roasted peppers with tons of garlic and EVOO and spicy/buttered COTC.
No cooking mojo tonight. Toasted WW sourdough, Dijon, diced Canadian bacon, fried FM eggs, Maldon salt flakes. Tasty, especially for the 6 minute effort.

Simple tonight: roasted Herbs de Provence BISO chicken thighs and yellow potatoes, with buttered steamed green beans alongside.

Boiled vacuum packed gnocchi with hot Italian sausage, browned butter and fresh sage, black pepper and half and half, a little starchy water to loosen. Thanks to the posters who advised me to leave a cup next to stove to remind me. Iceberg salad with avocado and chipotle ranch dressing.

Turkey Club, with bacon, Swiss, lettuce, tomato, dill pickle and mayo, on toasted whole grain.
The sandwich, however good, was completely overshadowed by DH’s home-fried potato chips, cut from new-crop Kennebec potatoes.
There will be homemade blueberry ice cream for dessert.
The photo doesn’t do them justice, they are darker and look like velvet. They smell good too.

I spent the day in town and had no dinner plans, so when I got home I did a freezer dive. I found shrimp, tomato/sausage sauce, mini penne, corn, okra and alfredo. I seared the shrimp, set aside and then sauteed fresh onions, garlic, red baby bells added the corn and okra, a splash of white wine, then the sauces and the penne, topped with the shrimp and parsley. Lettuce, tomato, cucumber salad with oo&v dressing, grated parm. Toasted sour dough with garlic parsley butter. Wine.

Grocery Outlet was rocking again today. Do You Love Me was playing and they announced on the intercom “Dancing in asile 8”.
So we all did.
I try to always buy Bell and Evans since I’ve never encountered any woody breast or white striping. If the store is out of them, I’ll go for the supermarket’s own organic chicken which is much cheaper. I never buy Tyson or Purdue anymore after too many issues years ago. I’m only picky when it comes to breasts, not thighs which I buy frequently.
No marinade or brine when breading/frying. Flour with salt and pepper, egg, then a 75/25 mix of Italian breadcrumbs to Panko, and I also add additional garlic powder, dried parsley, paprika (I just love the tint-- the flavor is not noticeable), and if I have Pecorino Romano on hand, I’ll add more than a healthy amount of that. Fried in canola oil.
That’s my standard cutlet, but will alter if doing a non-Italian sandwich or meal.
