Tonight’s dinner was a Thai coconut fish curry. I used red curry paste since that’s what I had and added a Thai red pepper to the broth instead of coating the fish fillet with the spice blend.

Massaman curry tonight in our house. A can of Maesri Masaman curry paste with 2 cans of coconut milk, cubed sweet potato, yellow onion and chicken breast. Served over jasmine rice, sprinkled with roasted peanuts. Thunderstorms are approaching and it’s getting cool. We’ll have leftovers for tomorrow night.

We enjoyed some great takeout from Don Pepe II, including seafood stuffed lobster, Paella Valenciana, and seafood stuffed avocado. It all went great with a fantastic inexpensive Zinfandel. There were a ton of leftovers.

Pan-roasted boneless, skin-on chicken breasts. The chicken was dry-brined for 24 hours with Penzey’s Southwest seasoning, salt and pepper. More of the lemony pasta salad. Green salad from the garden.

Magnifique on the So.Oregon coast today. Grilled Copper River salmon, Cajun seasoning, garlic and dill. Parsley potatoes, mixed greens and radicchio salad, tomato, avocado, celery, green onion, manchego cheese, oo&v dressing. Sangria.
I was disappointed in the salmon, very mild tasting, probably why it was on sale.

BF made a stir-fry following a recipe that used baby corn, which i don’t like (the canned kind, at least) but it said you could sub regular corn, which we had fresh. It wasn’t the best stir-fry we’ve had, but it was more than fine.

Took a mental health day today. I also felt I needed to cook something.

The last few days have been rough and we’ve been doing takeout. But tonight I wanted a cooking project to focus on and chose beef braised in Cotes du Rhone. I know this called for mashed potatoes but I really wanted to try making a Hasselback Potato which are lately all the rage on social media but actually date to the 1940’s. It was good, but despite the amount of oil and butter brushed on (including basting it twice while in the oven and again when it was done plus additional salting), could have used a bit more flavor. I don’t regret making it, but will make modifications next time. At least the beef was amazing and fall-apart tender.

As for the wine, I’m not a wine drinker AT ALL. But I poured myself a glass of this while working on tonight’s meal and it was really pleasant. Not sweet but not too dry either. I could definitely get into Cotes du Rhone.

I even tagged @paryzer on Instagram because I was so excited to find a wine I actually liked.

Cotes du Rhone is a nice wine and has some of my favorite grapes (Grenache, Syrah, Mourvedre). I’m glad to see you exploring red wines. If you like that grape combination you should try a Chateauneuf Du Pape.

Pan roasted chicken breasts with garlic scapes, rosemary and thyme. Side of black rice; not pictured. I’ve been enjoying some Japonica black rice. Great chew!
