Oh no - so sorry for your loss. Such a handsome boy, always enjoyed seeing pictures of him. I’m sure he had the best life possible, with your kind care and attention. RIP sweet Lawrence.

Last night’s dinner was bread wrapped mashed sweet potatoes (in the air fryer). I did serve some green beans on the side, as our vegetable. I’ve made these in the past with russet potatoes, but this was the first time I tried them with sweet potatoes. We had a small bag of sweet potatoes that were starting to “age” a bit, so I wanted to use them up before they went south. They were actually pretty good, Sunshine suggested adding a small amount of brown sugar to the mashed sweet potatoes, so I’ll try that next time I make them.

Dan, would you mind sharing you recipe for bread wrapped potatoes. I love my air fryer and would absolutely love to try the potatoes cooked this way. TIA.

I modified this youtube recipe. The breading I use is yeast based. Depending on how much you want to make, my standard breading recipe is 1.25 to 1.5 cups of warm water, 2 tablespoons of sugar (mix/dissolve sugar) add 2 teaspoons of yeast (let yeast bloom - 5 minutes) add flour (start with 2 cups and add more flour as needed) 2 teaspoons of salt and knead. Add flour until you get a nice bread dough feel. Coat dough ball in olive oil, cover & let rise for an hour. Punch down and form into tennis ball sized balls and put on baking sheet, cover & proof for 30 minutes or so. Roll out dough, add mashed potato mixture (your preferred spicing) , roll up, seal with egg wash, spritz with avocado oil and into the air fryer basket. 375 (F) for about 7-8 minutes until golden brown flip over, lightly spritz bottom with avocado oil and air fry another 5-6 minutes (again until golden brown)
Here is the original recipe, but I didn’t like her breading… so I made up my own (yeast based) breading. She deep fries her bread wrapped potatoes , I prefer the air fryer for this dish.

This was a bad week for pets. One of my coworkers had her cat pass yesterday morning as well, at almost the same exact time as mine. He had been sick for a while too.

Went for early eve Kölsch at the new local brewery (still prefer their Pilsner, but it sounds unlikely that it’ll be back any time soon SAD!). Their backyard may just be my favorite outdoor place to hang out in town 
One of my favorite food trucks was there as well, offering grilled cheese and mac & cheese variations.
My PIC and I shared the Cuban as usual & went full hog getting a large order of the mac with jalapeños & pulled pork. Nomskevitch.
