Here’s a wonderful wedge salad recipe with fried shallots on top.
WFD: ~ Stir-Fried Crystal Shrimp. This is one of those velveting techniques that entails several rinses of peeled and deveined shrimp after several fresh saltings. The shrimp is drained and dried, then coated with a mixture of egg white and cornstarch and marinates for a few minutes, then is blanched… This not only firms up the shrimp meat but creates a “crystal-like” texture that is quite pleasant.
The other ingredients are: peanut oil, chicken broth, Shao Hsing rice wine, ground white pepper, ginger, scallions, frozen peas. Then comes a usual stir-fry with the shrimp and peas added after the aromatics.
Lovely flavor to this recipe.
~ Mixed Vegetable Stir-Fry.
Green and red peppers, broccoli, red and white onions, snap peas, snow pea pods, bamboo shoots, bok choy, baby corn, mushrooms, carrots, and water chestnuts.
Simple stir-fry with peanut oil. garlic, ginger, scallions, RPF, veggies, white pepper, Chinese rice wine, dark soy sauce.
~ Soba noodles tossed with a small drizzle of sesame oil.
Lamb loin chops . Will cook in CI pan . Sauté some zucchini rounds . Cannellini beans and a bottle of Barbera D’ Alba . Taxes are in the mail .::

My plans changed last minute and the family already ordered pizza, so I threw together a quick shrimp stir fry.
Had to be another quick dinner tonight, as I got home late yet again.
Coupla carrots sliced; green bean ends snipped and the beans cut into 1" pieces; boneless pork chop sliced thinly. All was sauteed in a hot pan, adding the pork slices last. A “sauce” of chicken stock, cornstarch, salt, pepper, and ground ginger added at the end to thicken.
Spooned over basmati rice. Dinnah.
And while I haven’t watched for many years, I’m watching the American Idol final finale.
Not I made this stir-fry recently and it knocked it out of the park. I do think, however, that all the condiments are necessary.

Plans with a friend for dinner tonight were postponed so i went with an easy dinner- half a pumpernickle bagel toasted, open faced and piled with a schmear of that great hummus, some arugala, a few slices of hot house tomato and some avocado. Side of a bunch of quick pickled cucumber slices and a mug of hot v8 a la carte.

I read elsewhere of a technique of baking soda with the shrimp to give them that “crunch.” I havent tried it though. Here is an example of where they use the technique.

Spring rolls with carrots, cukes, tomato, avocado and either shrimp or shredded chicken. Thai dipping sauce with cilantro, garlic, Thai bird chile, fish sauce, lime juice and sugar. Pickled turnips, with beet added to the brine for color.
Leftover Zuni chicken and made again bread salad. So good.
My kind of meal .
I’ve heard so much about Zuni chicken. I’ve got to try it. Sure looks good.
Had a very late lunch of butter & lemon braised Belgian endive (a dish I “learned” from my mom), so didn’t feel like having my burrata caprese dinner before working again at 6 pm.
Instead, I managed to swing by casa lingua during a slowish moment and snag a few pieces of the hot snausage (same local purveyor where we got the ‘currywurst’ recently) my man had cooked for himself along with red pepper slices to top TJ’s “Greco-Roman pizza” with: very tasty and a good amount of lingering heat. Notable amount of garlic, too, as I realized later on in my shift
Burrata dinner was inhaled when I got home as well as some leftover hot snausage & peppers. No time for pics.
Into my second martini now. Amy Schumer’s in town tomorrow night. Life is good.
I love the chicken but I may love that salad even more A lot of different flavors and textures going on.
One of the many benefits of living on my small island is that none of us live far from the sea. I think the maximum is about 75 miles. So, we’ve been out for the day to Llandudno. Nice walk along the pier. Good fish & chips for lunch. Some shopping at the Bodnant Wlesh Food Centre.
As for dinner, there’s pork olives. Not sure of the stuffing but there’s stuff (geddit?) in to make one. Alongside, some new potatoes “en papilotte”. And roast cauliflower with a topping of butter, anchovies, breadcrumbs, lemon & parsley.
